It's the weekend and we need to make something delicious for an afternoon snack. This time I've decided on a very simple, healthy recipe, without flour or added refined sugars.
We're going to use natural ingredients to enjoy these muffins guilt-free. Let's sweeten them with raisins and banana or apple, add oat flour and shredded coconut, and make these muffins to pamper our bodies. They always appreciate it when we eat mindfully! 😁
Es fin de semana y tenemos que preparar algo rico para merendar, esta vez me he decidido por una receta muy sencilla, saludable, sin harinas, ni azucares refinados añadidos.
Vamos a usar ingredientes naturales para disfrutar estos muffins sin culpas, endulcemos con uvas pasas y cambur o manzana, agreguemos harina de avena y coco seco rallado, hagamos estos muffins para consentir nuestro cuerpo, el siempre agradece que comamos con conciencia 😁

The measuring cup I'm using is 250 ml.
-1 cup oat flour.
-1 cup shredded coconut.
-1/3 cup mashed banana or applesauce.
-1/2 cup raisins, soaked in warm water for 20 minutes.
-1 cup coconut milk.
-1 teaspoon vanilla extract.
-1 teaspoon baking powder.
-1/4 teaspoon salt.
-Materials needed: muffin tins, spatula, mixing bowl, measuring spoons.
The first thing to do is preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Lo primero en hacer es encender el horno a 180 grados.
In a bowl, we put the oat flour, sift it, and add the cup of shredded dried coconut; we mix.
Now add the banana or the mashed apple, either of these two fruits works well in this recipe, add the vanilla essence and the raisins, remember that this last ingredient must be previously hydrated.
Add the coconut milk and mix until the ingredients are well combined.
Now we add the salt and baking powder.
We mix again and our preparation is ready 👌
Now, using a measuring spoon, pour the mixture into your muffin tins. I used a 15mm spoon and put 3 spoonfuls into each small tin, resulting in a total of 8 muffins, if desired, add some granulated panela and shredded coconut on top for decoration.
We bake it in the oven for approximately 25 minutes or until a toothpick inserted into the center comes out clean.
Once ready, let them cool, unmold them, and enjoy! 😋
