This is my own version of cordon blue, instead of chicken i used eggplant. This is very simple and easy recipe.
First:
Slice the eggplant,ham and cheese thinly and rectangular shape and place them like the photo above.
Then:
Roll every eggplant with ham and cheese and stick a toothpick so they dont seperate. And lastly cover them with flour and dip in egg and breadcrumbs then dip fry it. And thats it its up to you what dippings you want i prefer gravy. Enjoy!
