Beans - 200g
Carrot - 1 (100 g)
Tomatoes - 4 (250 gms)
Green chili - 2
Green Coriander - 2-3 table spoons (finely chopped)
Oil - 2-3 tablespoons
Coconut - ½ cup (grated)
Peanut - ¼ cup (roasted)
Cumin - ½ teaspoon
Asafoetida - 1 pinch
Turmeric powder - ¼ teaspoon
Coriander Powder - 1 Tablespoon
Garam Masala - Less than ¼ teaspoon
Ginger - 1 tbsp (Paste)
Red Chilli Powder - ¼ teaspoon
Salt - 1 teaspoon or as per taste
Method
To make beans carrot curry, first wash the beans thoroughly and then remove the stalks from both sides and cut them into pieces in 1 inch or 3 inch inch pieces.
Prepare the carrots by peeling, washing and finely cut into small pieces.
Put the pan on the gas, add 1 table spoon oil and heat it. When the oil is hot, add the chopped beans, carrot and half a teaspoon of salt in the oil. Fry beans and carrots for 1-2 minutes running continuously. After frying the vegetable, put ¼ cup of water in it and let it cook on a low flame of cover.
Keep the vegetables in the middle. From which the vegetable does not stick on the bottom of the pan. Beans and carrots are not to be softened, to keep a little crunchy.
Now prepare the spices for the vegetable. Cut the tomatoes into large pieces and put them in a mixer jar and add green chillies into two pieces. Now make a paste of them.
Add tomato paste and peanut grated coconut and once again grind it into a mixer jar and make a fine paste.
Heat the pan, add 2 tablespoon oil and add cumin to the oil. After adding cumin seeds, add asafoetida, turmeric powder, coriander powder, ginger paste and fry a little bit of spices, add tomato, coconut, peanut paste and masala. Fry the spices until the oil begins to separate from the spices. Add red chili powder, after frying the masala, add 1 cup of water, ½ teaspoon of salt, garam masala and some green coriander and let it boil in the gravy.
When the spices are boiled, add carrots and beans in it and mix the vegetable and let it cook for 3-4 minutes on a low flame.
Check the vegetable, the vegetable is ready, take it out in a bowl and decorate it with green coriander. Serve and eat parathas, chapati or rice with any of the garamas hot beans carrots curry.
