Have you ever been in bed for a long time and it was only about thinking about breakfast? I am indeed one of those people who are lazy to have a heavy meal for breakfast. However, I also need energy. So to get around that, choosing ingredients that are rich in energy sources is the best choice.
Still lazing in my bed, then I thought about making warm porridge that is easy to make and will make me comfortable. Hmm, what do you think about porridge for breakfast?
Porridge is synonymous with people who are sick. At least that's what happened to my family and people around here. But for me, porridge doesn't have to be about eating people who are sick.
We can enjoy porridge to start the day if we are not sick. For ingredients, we can choose the ingredients we like. Even better if porridge for breakfast is a superfood that helps meet daily energy needs.
Then what about dates? Dates are one of the superfoods that are rich sources of carbohydrates, fiber, and other nutrients. In addition to containing natural sweetness, dates can be beneficial for digestive health, bone health, and even the eyes. That's why we can make dates as a healthy breakfast ingredient.
However, not everyone likes dates because they are too sweet. Do you like dates? Indeed, including things that are tricky to serve dates.
For me, the best way to serve dates is to serve them as chewy desserts. In addition, it is served cold as ice by mixing it with coconut milk. But this time I serve these dates for something else, although the presentation is somewhat the same.

The main key to making ”Date Porridge” is to create a date mixture.
In the ”Date Porridge” recipe, all the ingredients I use are plant-based ingredients. I use coconut milk to mix to make the date mixture.
In addition to using coconut milk, I use young coconut water because I do have a supply of young coconut. Also along with young coconut flesh which I will later use for topping. The coconut water that I use in this recipe is optional. You can replace it with water so that the consistency of the texture is not too dense.
When the date mixture is finished for use, we can use these basic ingredients to make other dishes such as iced, and pudding.
On the other hand, you can also use the remaining date mixture for the base raw vegan cake. The date mixture can turn into a set when frozen, or you can cook it again with the cornstarch mixture.
Then, let's make ”Date Porridge” with easy cooking instructions! I promise it won't be complicated. Once you've prepared the date mixture, you just need to do a little light work to make ”Date Porridge” and it's ready to eat.
1 cup of dates
1/2 cup of coconut milk
200 ml of coconut water or you can use just water.
Create a date mixture. Remove the date seeds, then put them in a blender, and mix them with the coconut milk and young coconut water. Blend until evenly mixed and becomes a puree. If the puree texture is still too dense and you find it difficult to blend the dates, then add more water.
Here I have added coconut water several times because the texture of the mixture is still too dense and it will make the results boring when eaten.
Serve date porridge with other textured toppings such as crumbs, or fresh fruit. Here I use young coconut flesh. As a suggestion you can also add apple slices.
I like the result of ”Date Porridge”. Indeed, for some, the final taste of ”Date Porridge” will be too sweet. But with a topping that is not too sweet, it will help the overall taste to be balanced.
Since I'm using young coconut flesh here, it will help reduce the sweetness a little more.
If there is ”Date Porridge” left, you can save it to create another menu. I prefer to make an iced date with coconut milk. It's perfect for a hot day in the tropics.
