For the seasoning, I only use 2 cloves of shallots, 1 clove of garlic, celery, scallions, 1 egg, sweet soy sauce, salt, and bouillon powder. If you want a richer flavor, you can also add a little onion. For those who love spicy food, a few slices of red chili or bird鈥檚 eye chili can also be a perfect addition.
The first step is to soak the still stiff rice noodles in plain water for about 15 minutes until they become more pliable. Once the rice noodles are no longer stiff, drain the soaking water.
Next, bring water to a boil in a wok. Once the water is fully boiling, add the soaked rice noodles to the hot water and cook for about 5 minutes. Next, add the drained rice noodles, then gently stir with a spatula so the seasonings are evenly distributed. Add salt, bouillon powder, and sweet soy sauce to taste. Stir again until all the seasonings coat the rice noodles perfectly.
