This is the kind of wholesome comfort food that I love to cook for my family. This slow cooker beef stew is loaded with chunks of tender beef, potatoes, carrots. Made with easy to find and affordable ingredients, this soup is so comforting and filling. It’s a hearty and healthy stew made with simple ingredients.
I typically serve my stew with bread or hot rice it’s really filling enough to serve as-is for a complete meal. It really makes a difference and instantly elevates the flavor of this one-pot dinner! This is one of the best pressure cooker recipes for a meal.
1.My goal is always to keep my recipes as simple as possible while also maximizing flavor. After you've rinsed off the beef, cut the beef into squares, marinate them with salt and pepper, cashew oil lemongrass and ginger. Crushing lemongrass and ginger, I also use ginger leaves to make the dish more attractive. This flavor base makes any dish immediately recognizable as Vietnamese. While the meat is marinating, peel the carrots and potatoes, chop your vegetables.
2. Stir-fry beef with ginger and lemongrass, tomatoes for 2-3 minutes, add boiling water, make sure the ingredients are covered by the water . Cover the pressure cooker, I use the pressure cooker for this recipe, it will save me time and gas.
3.Cook this on low heat for 1-1,5 hours, or until the beef are tender. After this time, add your potatoes and carrots. Keep simmering until the vegetables are tender. Adjust seasoning to taste. If too much liquid is lost during cooking, you can add some hot water at the end.
