Title says it all!
I made these super delicious Loaded Twice Baked Potatoes and they are so good I just had to share the recipe...
These tasty morsels are relatively easy and quick if you plan ahead, a cheesy, bacon topped comfort food. I highly recommend thowing a few potatoes in the oven the next time you have it on, and whipping these up the next day.
You won't be disappointed!
Loaded Twice Baked Potatoes
Ingredients:
6 baked potatoes, cooled
2 Tbsp butter
1/4 cup milk
1/4 cup gated romano cheese
1/2 tsp parsley
1 tsp onion powder
salt and pepper to taste
1/4 cup chopped bacon
1/4 cup diced red onion
1/2 cup grated chedder cheese
2 Tbsp diced jalapeno pepper
Method:
1) Chop and cook some lovely local bacon
2) While the bacon is cooking, slice your beautiful baked potatoes in half...
... And scoop out the cooked potato innards being sure to leave a little flesh attached to the skin, so that you have a sturdy bowl
After removing the bacon from the pan, add the potato flesh, butter, and milk
Mash it all up! Then, add the romano, parsley, onion powder, and salt and pepper
Cook over med-low until heated through, about 5to 10 minutes
While the mashed potatoes are cooking, turn on oven to preheat to 425°. Dice up the onion and peppers. My toddler likes to eat raw onion... He's a little strange...
Scoop the hot potato mixture into the potato skin bowls
Top with the bacon, onion, peppers, and cheese. Put into oven for 15 minutes
Serve! We had these with simple devilled eggs and carrots and dip for a well balanced, extremely tasty and satisfying meal.
