Queridos amigos deseando se encuentren muy bien. Les traigo una receta exquisita la puedes preparar para cualquier ocasión y lo mejor; se puede acompañar con pasta, papas, tubérculos, hasta con arepas y tomates al grill, ¡uff! delicioso.
Hace algunos días, recibí un par de regalos provenientes de la madre tierra, un racimo de albahaca fresca, verdecita que con su aroma impregno el hogar y unas bellas batatas (Boniato) rosadas. Gracias, amado amigo 😘.
Entonces, decidí crear un Pesto, junto con este dulce tubérculo.
La albahaca es antinflamatoria, depurativa, antibacteriana, antioxidante, entre tantos beneficios.
Por su parte, la batata o (boniato), podemos mencionar que reduce el colesterol, alto en fibra y ácido fólico.
Esta receta fue preparada al modo tradicional, con piedra de pisar y un calderito, tal como la aprendí. Ustedes pueden usar la licuadora u otro ayudante de cocina.
Hoy la música se hizo presente en el ambiente, dejé que el IPod me sorprendiera, me acompaña el Sr. Miles Davis con su disco Kind of Blue.

Para el Pesto:
Aceite de olivo
4/5 dientes de ajo
Sal
Albahaca
3 Batatas
Ⲣⲅⲉⲣⲇⲅⲇⲥⲓⲟ́ⲛ:
Pelamos las batatas, lavamos y colocamos en una olla a hervir o si lo prefieres, cocinar al vapor.
Desprendemos las hojas del tallo de la albahaca, lavamos y luego extendemos en un paño para secar. Las coloco en mi calderito, con los ajos y el toque sal.
Con el instrumento mágico –la piedra- comienzo a unir los ingredientes y los aromas se van desprendiendo, machacamos la sal, el ajo y las hojas hasta hacerla puré, machacando y removiendo con la piedra.
Rectificamos la sal, continuamos en el proceso, hasta obtener la textura deseada, incorporamos el aceite de olivo, removemos y listo.
Verificamos la batata, si se suelta del tenedor esta lista. Colamos, servimos y disfrutamos…

So, I decided to create a Pesto, together with this sweet tuber.

Sweet potatoes, as many as you want
Ⲣⲅⲉⲣⲇⲅⲇⲧⲓⲟⲛ:
Peel the sweet potatoes, wash and place in a pot to boil or steam if you prefer.
Remove the leaves from the stem of the basil, wash and then spread them on a cloth to dry. I put them in my little cauldron, with the garlic and a touch of salt.
With the magic instrument - the stone - I begin to unite the ingredients and the aromas are released, we crush the salt, garlic and leaves to a puree, mashing and stirring with the stone.
We rectify the salt, we continue in the process, until we obtain the desired texture, we incorporate the olive oil, we stir and that's it.

Check the sweet potato, if it comes loose from the fork it is ready. Strain, serve and enjoy
