Hi bloggers and food lovers, today I’m sharing a recipe for sweet and tangy lemon sugar cookies to enjoy as a weekend treat. These lemon sugar cookies are my entry for the Qurator's Hive Top Chef! hosted by qurator@qurator. These cookies are very simple, look appealing with their yellow color, and are, of course, easy to make. Okay, let’s get started

Ingredients:

  • 220 grams margarine
  • 200 grams sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 1/2 tsp baking powder
  • zest of 2 small lemons
  • 2 tbsp lemon juice
  • 300 grams all-purpose flour

Instructions:

  • Melt the margarine until fully melted

  • Pour the melted margarine into a mixing bowl containing the sugar and baking powder

  • Whisk until the sugar begins to dissolve and the mixture starts to expand

  • Crack the egg and separate the white from the yolk then add the egg yolk to the bowl

  • Stir briefly

  • Add the lemon zest and lemon juice to the bowl

  • Stir again

  • Gradually add the all-purpose flour until the dough begins to thicken and forms a fairly firm dough

  • Chill the dough for 30 minutes in the chiller

  • After 30 minutes, remove the dough and scoop out 1 scoop of dough, then roll it in a mixture of sugar and lemon zest

  • Place on baking paper

  • Repeat until all the dough is used up

  • Bake the cookies in the oven at 320°F or 180°C for 45 minutes

  • Once done, turn off the oven and let the lemon cookies cool

  • The lemon sugar cookies are ready to serve
