Ingredients :

275 gr rice flour
100 gr cassava tape
½ tablespoon of instant yeast
100 gr brown sugar, puree
2 tbsp sugar
150 mL coconut water
250 mL thick coconut milk
¼ tsp salt

How to make :

  1. Blend cassava tape, mix with sugar and instant yeast.
    Squeeze until sugar is well blended and dissolved.
  2. Add the rice flour to the dough, mix well
  3. Pour the coconut water bit by bit while diuleni by hand for 15 minutes
  4. Put salt and coconut milk little by little while flat on the floor
  5. Let stand dough for approximately 1 hour to expand
  6. Heat molds of apem / mud cakes, rub with a little oil
  7. Pour batter apem, wait until it looks holes, cover
    Flip it until the underside is ripe.
