I’d like to introduce you to a soup made with cojinoa, herring, and chipichipi. It’s an exotic combination I wanted to share with you today—you always have to be creative in the kitchen so we can enjoy delicious dishes at our table.

In addition to the classic vegetables—cassava, squash, and taro—I also added chili peppers, garlic, paprika, and onion.

Ingredients:

Here are the ingredients I used: 1 kg of fish—in this case, cojinoa, a fish with an exquisite flavor—1/2 kg of herring or sardines, 300 grams of chipichipi, 1 kg of vegetables, and 2 zumbies. Salt to taste and lemon. Everything is shown in the photo.

Preparation:

In a 4-liter pot, add approximately 3 liters of filtered water and place it on the stove over high heat.

Peel the vegetables, cut them into medium-sized pieces, rinse them thoroughly with plenty of water, and add them to the pot.

Bring to a boil until the vegetables are tender—use the cassava as a guide. Also add the topochos or zombies.

Add salt to taste. Let it boil, then clean and chop the seasonings (onion, chili pepper, garlic, paprika), and add them to the pot.

Let it boil for 5 more minutes. Squeeze the juice from two lemons. Turn off the heat and let it rest until it reaches a temperature suitable for eating. Serve, and enjoy your meal.

Les presento una sopa de cojinoa, arenque y chipichipi. Una combinación exótica que quise traerles hoy, siempre hay que ser creativos en la cocina, así tendremos platillos deliciosos en nuestra mesa.

Además de las clásicas verduras, yuca, auyama y ocumo. También añadí ají, ajo, pimentón y cebolla.

Les voy a colocar los ingredientes que usé: 1kg. de pescado, en esta oportunidad cojinoa, un pescado que proporciona un exquisito sabor, 1/2 kg. de arenque o sardina, 300 grs. de chipichipi, 1 kg. de verduras, 2 zumbies. Sal al gusto y limón. Todo como se muestra en la fotografía.

Preparación:

En una olla de 4 litros añadimos 3 litros de agua filtrada aproximadamente y la colocamos en la cocina a fuego fuerte.

Pelamos la verdura, cortamos en trozos medianas, lavamos con bastante agua, y añadimos a la olla.

Dejamos hervir, hasta que la verdura esté blanda, la referencia es la yuca. También añadimos los topochos o zombies.

Agregamos sal gusto. Dejamos hervir, luego limpiamos y picamos los aliños (cebolla, ají, ajo, pimentón), añadimos a la olla.

Dejamos hervir por 5 minutos más. Exprimimos el jugo de dos limones. Apagamos la cocina y dejamos reposar hasta que consideremos que está a una temperatura aceptable para comer. Servimos, y buen provecho.
