Today I dared to make some plantain arepas with pumpkin, an exotic combination that I would definitely make again because the result was extraordinary. The arepas were very soft, with a natural sweetness, and for the filling I opted for the traditional fried eggs and grated white cheese. The perfect combination for breakfast.

Ingredients:

  • 1/2 plantain
  • 1/4 pumpkin
  • 100 grams of corn flour
  • 1 pinch of salt
  • 1 tablespoon of sugar
  • 4 cups of water

Preparation:

I removed the seeds and rind from the pumpkin, cut it into small pieces, and boiled it in plenty of water. I cooked it for fifteen minutes, checking with a fork to make sure the pumpkin was soft. Once it had reached the ideal texture, I removed it from the water, mashed it, and set it aside.

Meanwhile, I peeled the plantain, sliced it, and blended it with a measure of water. This provided the base for the dough. I added salt and sugar, then added the corn flour and proceeded to knead.

I then added the mashed pumpkin and continued kneading. The mixture reached the ideal consistency, and from there, I formed three medium-sized arepas.

The next step was to set up a budare in the kitchen. I oiled the surface with a napkin and placed the arepas on it, cooking them for ten minutes on each side.

While the arepas were finishing cooking, I put a frying pan on the stove with a measure of oil and fried two eggs.

It was time to combine everything. I took the arepas off the budare, spread butter on them, grated white cheese, and served them with eggs. It was a delicious breakfast. The arepas had a unique, very tasty flavor, ideal for combining with other foods, which I will surely do again in the future.

Hoy me atreví a preparar unas arepas de plátano con auyama, una combinación exótica que sin duda volvería a repetir porque el resultado fue extraordinario. Las arepas quedaron muy suaves, con un dulzor natural y para rellenar opté por los tradicionales huevos fritos y queso blanco rallado. La combinación perfecta para un desayuno.

Preparación:

Retiré las semillas de la auyama y la corteza, dividí en pedazos pequeños y con suficiente agua los puse a sancochar. Cociné por quince minutos, corroboré con un tenedor que la auyama estuviera blanda. Al obtener la textura ideal saqué del agua, trituré y reservé.

Por otra parte, retiré la cáscara del plátano, dividí en rodajas y con una medida de agua licué. Con ello se logró la base para la masa, añadí sal y azúcar, luego agregué la harina de maíz y procedí a amasar.

Posteriormente agregué la auyama triturada y continúe amasando. La mezcla obtuvo una consistencia ideal y, a partir de allí, formé tres arepas medianas.

El siguiente paso fue montar un budare en la cocina. Aceité la superficie con una servilleta y coloqué las arepas, cociné durante diez minutos por cada lado.

Mientras se terminaban de cocinar las arepas, puse un sartén sobre la cocina con una medida de aceite y allí frité dos huevos.

Llegó la hora de combinar, saqué las arepas del budare, les unté mantequilla, rallé queso blanco y acompañé con los huevos. Un desayuno de altura, las arepas adquirieron un sabor particular, muy gustoso, ideal para combinar, lo que seguramente haré más adelante.
