¡Hola, amigos! Deseo que se encuentren muy bien. Hoy quiero compartirles una experiencia muy bonita y divertida, relacionada con mi primera vez utilizando crema chantilly para decorar un pastel. En esta ocasión estábamos celebrando el cumpleaños número dos de mi sobrina Luisana, por lo que mi hermano me pidió una torta bien alta. Al ver su entusiasmo, por supuesto que puse manos a la obra de inmediato para cumplir con su solicitud.
Su primera petición fue que el bizcocho fuera de chocolate, pero con una condición muy importante: que quedara húmedo. Muchas veces las tortas de chocolate tienden a sentirse un poco secas, y él quería evitar eso por completo. Como la tarta iba a tener una altura considerable, necesitaba cierta firmeza y no podía ser una receta completamente fría. Para lograr esa textura suave sin sacrificar consistencia, utilicé una mezcla de mantequilla y aceite.
Hi, friends! I hope you’re all doing great. Today I want to share a really lovely and fun experience with you—it’s about the first time I used whipped cream to decorate a cake. We were celebrating my niece Luisana’s second birthday, so my brother asked me to make a really tall cake. Seeing how excited he was, I naturally got right to work to fulfill his request.
His first request was that the cake be chocolate, but with one very important condition: it had to stay moist. Chocolate cakes often tend to feel a bit dry, and he wanted to avoid that completely. Since the cake was going to be quite tall, it needed some firmness and couldn’t be made with a completely cold batter. To achieve that soft texture without sacrificing firmness, I used a mixture of butter and oil.
La mantequilla le aporta el cuerpo necesario a la masa, mientras que el aceite le da ese toque tierno de humedad en cada bocado. Suelo combinar ambos ingredientes porque no me gusta usar solo aceite; algunos tipos tienden a dejar un sabor particular que prefiero evitar. Para lograr la altura que mi hermano deseaba, utilicé un kilo y medio de harina y horneé tres bizcochos en mi molde de veinticinco centímetros, que ya de por sí es bastante alto.
Luego monté las tres capas una sobre la otra para formar una sola base imponente, rellenándola generosamente con crema pastelera de chocolate. En proyectos anteriores había hecho tortas dobles con este molde y los palitos de altura bastaban, pero al hacerla triple, el peso aumentó exponencialmente. Cuando iba por la quinta capa entre el relleno y los bizcochos, noté que la estructura comenzaba a ceder un poco por el exceso de carga.
The butter gives the dough the necessary body, while the oil adds that tender touch of moisture to every bite. I usually combine both ingredients because I don’t like using just oil; some types tend to leave a distinct flavor that I’d rather avoid. To achieve the height my brother wanted, I used one and a half kilos of flour and baked three cake layers in my 25-centimeter pan, which is already quite tall on its own.
Then I stacked the three layers on top of each other to form a single, imposing base, filling it generously with chocolate pastry cream. In previous projects, I’d made double-layer cakes with this pan and the support rods were sufficient, but when I made it a triple-layer cake, the weight increased exponentially. When I got to the fifth layer between the filling and the cake layers, I noticed that the structure was starting to give way a little under the excess weight.
Los palitos de madera ya no eran suficientes para evitar que se moviera; debí haberle colocado una base interna de cartón entre los niveles para soportar mejor el peso. Son esos detalles que uno piensa que no harán falta hasta que la práctica te demuestra lo contrario, convirtiéndose en un aprendizaje invaluable. Pero sin duda, el mayor desafío de este día fue trabajar por primera vez con la crema chantilly, ya que tenía un poco de miedo de pasarme de batido y arruinarla.
Para este pastel utilicé un litro entero de crema y, aunque pensé que me sobraría, la gran altura de la torta hizo que el rendimiento quedara justo para cubrirla. La preparé siguiendo las recomendaciones con azúcar pulverizada y esencia de vainilla de mantecado, y cuando estuvo lista, la teñí de color rosa. Tuve que hacer un buen muro de contención para evitar que la crema pastelera se desbordara, aunque el mismo peso hizo que cediera un poco por un lado.
The wooden sticks weren’t enough to keep it from shifting; I should have added an inner cardboard base between the layers to better support the weight. Those are the details you think you won’t need until experience proves you wrong, turning them into an invaluable lesson. But without a doubt, the biggest challenge of the day was working with whipped cream for the first time, since I was a little afraid of over-whipping it and ruining it.
For this cake, I used a whole liter of cream, and although I thought I’d have some left over, the cake’s great height meant there was just enough to cover it. I prepared it according to the instructions, using powdered sugar and vanilla butter essence, and when it was ready, I colored it pink. I had to build a solid retaining wall to keep the pastry cream from spilling over, though the weight of the cake itself caused it to sag a little on one side.
Como no tengo una espátula repostera tan alta, decidí darle un acabado con ondas hacia arriba muy sutiles, y con lo poquito que me sobró logré hacerle unos detalles arriba. Para completar el diseño, utilicé impresiones en papel fotográfico con el motivo favorito de la comiquita que ve mi sobrina, recortándolas y colocándolas estratégicamente alrededor de toda la torta.
El momento de la verdad llegó al trasladarla, pues la torta terminó pesando casi ocho kilos y aunque el trayecto es corto, el volumen imponía respeto. Al final, una señora que la vio pasar comentó que parecía un termo o un tubo de agua por su forma cilíndrica y su gran altura. El sabor de la chantilly quedó divino y espero usarla en mis próximas preparaciones, feliz de seguir aprendiendo a base de ensayo y error en la repostería.
Since I don’t have a pastry spatula that tall, I decided to give it a very subtle upward-curving finish, and with the little bit of batter I had left over, I managed to add some details on top. To complete the design, I used prints on photo paper featuring the favorite character from the cartoon my niece watches, cutting them out and strategically placing them all around the cake.
The moment of truth came when I had to carry it, since the cake ended up weighing almost eight kilos, and even though the distance was short, its size was quite imposing. In the end, a woman who saw it go by commented that it looked like a thermos or a water pipe because of its cylindrical shape and great height. The whipped cream tasted divine, and I hope to use it in my future creations—I’m happy to keep learning through trial and error in baking.
