Yesterday was the day! Finally a nice sunny day after a week or so, so we all at the Casa COVID (COVID house #lol) got together and made some empanadas, Chilean snack. The baked puff with some delicious filling.
Pino empanadas!
We made the filling called 'Pino', typical Chilean filling made with some meat, onions, garlic, carrots, olive, and hard-boiled eggs, isn't that sound so weird, well, it also sounds so good! Yesterday, we started with the dough first so once we needed the dough to set, we can just go ahead and have fun with the filling.
Empanada dough:
A kilo of cooking flour, 200grams of butter or margarine, 25 grams of salt, a teaspoon of baking powder and a bit of water. Mix them all together and massage (Do they use this word in English? #lol) pretty good till the ingredients mixed well and turns into a nice smooth dough.
Leave that for 1-1.5 hours. In the meantime, let's make some filling :)
Pino empanada filling
Your choice of meat (beef! use beef! :D), onions, garlic, carrots stir-fried all together till you get that golden color of the onion. Spices like salt, pepper, oregano, paprika. That's it! Easy peasy!
Make the shape you like, fill in some filling together with olive, and hard-boiled eggs to make it a real pino!
