This sounds and looks and probably tastes amazing! At first I thought it was an Afrikaanse tosti ( grilled cheese sandwich ) but it seems pretty different. Pretty and different.

P.S. I remember having an aunt - younger sister of my grandma - who ate sourdough bread, back in the early 90s (when I was a kid ). It was pretty special, back then, and so was she.
