It seems to be becoming a habit for me to prepare a special dessert on Mondays. Maybe it is an unconscious fact to start the week with a little sweetness that I think always looks good in our lives.

I don't know if it happens to you, but in particular I associate some dessert of my taste with happiness and, in my case, if it has chocolate, the matter improves and expands.

Parece que se está haciendo habitual en mí, prepararme algún postre especial los lunes. Quizás sea un hecho inconsciente para comenzar la semana con un poco de dulzura que creo que siempre queda bien en nuestras vidas.

No sé si les sucede, pero en lo particular asocio algún postre de mi gusto con felicidad y, en mi caso, si lleva chocolate, el asunto mejora y se expande.

So today, taking advantage of the mandarin season, knowing that they are very sweet, I have mixed this delicious fruit, one of my favorites, with my beloved chocolate and, literally, I have had an explosion of flavors while enjoying my dessert.

Así que hoy, aprovechando la temporada de mandarinas, sabiendo que se consiguen bien dulces, he mezclado esta deliciosa fruta, unas de mis favoritas, con mi adorado chocolate y, literalmente, he tenido una explosión de sabores mientras disfruté de mi postre.

Ingredients for 4 pudding cups:

Half a medium tender coconut, cut into small pieces.
1 and 1/2 cups of water.
1/4 cup of cocoa powder.
2 tablespoons cornstarch.
2 spoonfuls of sugar.
3 sweet tangerines.

Ingredientes para 4 vasitos de pudín:

Medio coco tierno mediano, cortado en trocitos.

1 y 1/2 de Taza de agua.

1/4 de Taza de caco en polvo.

2 Cucharadas de maicena.

2 Cucharadas de azúcar.

3 Mandarinas dulces.

Preparation:

The first thing I did was to peel the mandarins, open each wedge and extract pieces of the pulp. I set aside.

Lo primero que hice fue pelar las mandarinas, abrir cada gajito y extraer trozos de la pulpa. Reservé.

Next, I prepared a delicious vegetable milk, blending the coconut with the water. I strained it, poured it into a pot and put it over medium heat.

Seguidamente, preparé una deliciosa leche vegetal, licuando muy bien el coco con el agua. Colé, la vertí en una olla y llevé a fuego medio.

I added the cornstarch, sugar and cocoa powder. I beat with a ball whisk until all the ingredients were integrated. Then I stirred with a wooden spoon over low heat until the mixture thickened.

Agregué la maicena, el azúcar y el cacao en polvo. Batí con un batidor de bola hasta integrar todos los ingrediente. Luego fui removiendo con una cuchara de palo a fuego bajo hasta que la mezcla se espesó.

I turned off the stove and added the mandarin segments. I integrated with smooth and enveloping movements without crushing the mandarin pieces. The idea is to keep them as whole as possible.

Apagué la cocina y agregué los gajitos de mandarina. Integré con movimientos suaves y envolventes sin que los trocitos de mandarina se aplastaran. La idea es que queden lo más enteros posible.

I added the mixture to small glasses, making sure that each portion had a good amount of mandarin segments.

Agregué la mezcla a unos vasitos, tratando que cada porción llevara buena cantidad de gajos de mandarina.

I let it cool and then refrigerated for about 3 hours.

Dejé enfriar y luego refrigeré por alrededor de 3 horas.

After that time, I tried one of the puddings and it was delicious. I love the slightly acid touch that the tangerine provides and feel its juicy texture together with the softness of the pudding, perfect. 🤤

Finally, I served in glasses with other mandarin segments to present it.

Pasado ese tiempo, probé uno de los pudines y la verdad que estaba delicioso. Me encanta el toque ligeramente ácido que brinda la mandarina y sentir su textura jugosa junto a la suavidad del pudin, perfecto. 🤤

Finalmente, serví en copas con otros gajitos de mandarina para presentarlo.
