Justo hoy pensaba en las ricas cachapas que hace mi mamá, de ese sabor con el que crecí, comiendo mazorca de la cosecha del patio de mi casa y siendo feliz. Mi plato favorito de todo el mundo es este y hace mucho no me daba un gusto como ese en su forma natural. Pues hoy era el día, así que hubo que improvisar un poco.

Me animé a preparar cachapas básicamente porque el maíz está en cosecha y se consigue muy por debajo de su precio habitual en la ciudad, así que tenía que aprovechar. Lo primero que noté al cocinar una mazorca antes de la preparación es que no tenían mucho sabor, así que tuve que inspirarme aún más para lograr al menos en gran medida los sabores que recordaba.

Así que sin muchos implementos me las ingenié con mi licuadora y la sartén de siempre, incluso como todo fue improvisado hubieron algunos ingredientes que no aparecen en la foto porque sentí en medio de la preparación que era el momento en que debía utilizarlos. De igual manera todo salió mejor de lo que esperaba, así que les voy a contar los ingredientes que utilicé y un paso a paso muy sencillo para su elaboración.

Bicarbonato (opcional)½ cucharadita

Procedimiento

Paso 1.- Desgranar las mazorcas con la ayuda de un cuchillo. Agregar a la licuadora los granos de maíz desgranados más la media lata de maíz dulce, el huevo, azúcar, sal, bicarbonato y la leche, la idea es que el maíz dulce le diera un toque más rico a la mezcla. Licuar durante unos 3 o 4 minutos. En mi caso noté que había quedado muy líquida la masa y le agregué de manera improvisada 2 cucharadas de harina de maíz para compactarla mejor y funcionó.

Paso 2.- Solo queda cocinar las cachapas agregando un porción de la mezcla en una sartén con un poco de aceite a fuego medio, lo mejor de todo es que el bicarbonato ayudó a que tuvieran una contextura esponjosa. Pasados 4 o 5 minutos voltear y dejar cocinar durante el mismo tiempo o hasta que tenga la consistencia deseada. Una vez lista agregar la cantidad de queso que prefieran, también se puede acompañar con alguna proteína.

La verdad me sorprendió su sabor, aunque la idea de prepararlas surgió de un momento a otro puedo decir que fue un éxito. Con las cantidades que describo al inicio preparé 3 cachapas medianas y 3 pequeñas. Definitivamente el sabor no se compara a las harinas que se consiguen en paquetes para prepararlas, lo natural del maíz fresco más el maíz dulce fueron la combinación perfecta. Así que quedé muy feliz con el resultado.

Espero que les haya gustado esta receta y que se animen a prepararla en casa, la idea es disfrutar, combinar con lo que más les guste y de paso recordar un poquito de sus raíces si también son de mi amada Venezuela.

Just today I was thinking about the rich cachapas my mom makes, of that taste I grew up with, eating corn on the cob from my backyard harvest and being happy. My favorite dish in the whole world is this one and it's been a long time since I had a treat like that in its natural form. Well, today was the day, so I had to improvise a bit.

I decided to prepare cachapas basically because corn is in harvest and it is available at a much lower price than usual in the city, so I had to take advantage of it. The first thing I noticed when cooking a cob before the preparation is that they did not have much flavor, so I had to inspire me even more to achieve at least to a large extent the flavors I remembered.

So without many implements I managed with my blender and the usual pan, even as everything was improvised there were some ingredients that do not appear in the photo because I felt in the middle of the preparation that it was time to use them. Anyway, everything turned out better than I expected, so I am going to tell you the ingredients I used and a very simple step by step for its preparation.

Procedure

Step 1.- Shuck the corn cobs with the help of a knife. Add to the blender the shelled corn kernels plus the half can of sweet corn, egg, sugar, salt, baking soda and milk, the idea is that the sweet corn would give a richer touch to the mixture. Blend for about 3 or 4 minutes. In my case I noticed that the dough had become very liquid and I added 2 tablespoons of corn flour to compact it better and it worked.

Step 2.- The only thing left to do is to cook the cachapas by adding a portion of the mixture in a pan with a little oil over medium heat, the best part is that the baking soda helped them to have a spongy texture. After 4 or 5 minutes turn over and let it cook for the same amount of time or until it has the desired consistency. Once ready add the amount of cheese you prefer, it can also be accompanied with some protein.

The truth is that I was surprised by their flavor, although the idea of preparing them came up from one moment to the next, I can say that it was a success. With the quantities I described at the beginning I prepared 3 medium and 3 small cachapas. Definitely the flavor does not compare to the flours that you get in packages to prepare them, the natural fresh corn plus the sweet corn were the perfect combination. So I was very happy with the result.
