It’s zucchini boats stuffed with spiced ground meat—a dish that goes far beyond the everyday thanks to the combination of spices, particularly cinnamon, which is my star ingredient.

Lo interesante de este plato es el perfil aromático, ya que no se trata de un guiso de carne común, sino que decidí incorporar especias como la canela, el comino y la cúrcuma, las cuales le dieron un toque similar al de los platillos del Medio Oriente, contrastando a la perfección con el calabacín.
Además, es un plato sumamente noble y versátil, ya que no solo aprovechamos la pulpa del calabacín para agregarla a la carne, sino que además puedes prepararlo con el relleno que desees. Y ahora sin más vamos a revisar los ingredientes y el procedimiento.
What makes this dish interesting is its flavor profile, since it’s not your typical meat stew—I decided to incorporate spices like cinnamon, cumin, and turmeric, which gave it a flavor similar to Middle Eastern dishes, contrasting perfectly with the zucchini.
Plus, it’s an incredibly versatile dish, since not only do we use the zucchini flesh to add to the meat, but you can also prepare it with whatever filling you like. And now, without further ado, let’s go over the ingredients and instructions.

Procedimiento/Procedure
La preparación de este platillo requiere de atención y precisión desde el primer momento para limpiar y vaciar de manera correcta nuestros calabacines. Iniciamos lavándolos muy bien y raspando un poco la piel con un cuchillo para asegurarnos de eliminar cualquier partícula de tierra.
Seguidamente los cortamos por la mitad a lo largo y con la ayuda de una cuchara pequeña y con mucho cuidado para no romper la corteza, vamos quitando la pulpa hasta formar unas canoas firmes. No les quiten demasiada carne porque durante la cocción van a perder su forma y no cumplirán con su función de contener el guiso.
Las llevamos a agua caliente con sal para suavizar un poco. Cortamos la pulpa que extrajimos y reservamos.
Preparing this dish requires attention and precision from the very beginning to properly clean and hollow out the zucchini. Start by washing them thoroughly and lightly scraping the skin with a knife to ensure you remove any traces of dirt.
Next, cut them in half lengthwise and, using a small spoon and taking great care not to break the skin, scoop out the flesh until you’re left with firm “canoes.” Don’t remove too much flesh, because they’ll lose their shape during cooking and won’t be able to hold the stew.
Place them in hot salted water to soften them slightly. Chop the flesh you removed and set it aside.
El siguiente paso es cortar en cubos pequeños la cebolla y el ajo junto con el cilantro. Seguidamente llevamos los vegetales a una sartén profunda con un chorrito de aceite de oliva e incorporamos de inmediato la canela, el comino, la cúrcuma y la pimienta negra, permitiendo que las especias se activen con el calor y perfumen la grasa antes de agregar la proteína. Recuerden que esto toma solo un minuto para que nuestras especias no se quemen.
The next step is to dice the onion, garlic, and cilantro into small cubes. Next, place the vegetables in a deep skillet with a splash of olive oil and immediately add the cinnamon, cumin, turmeric, and black pepper, allowing the spices to release their flavor with the heat and infuse the oil before adding the protein. Remember that this takes only a minute so that our spices don’t burn.
En este punto incorporamos la carne molida, y es indispensable trabajarla bien con la paleta de madera, para asegurarnos de desmenuzarla por completo para que se mezcle de manera uniforme con las especias y se cocine sin formar grumos. Cocinamos hasta que comience a dorar.
At this point, we add the ground meat, and it’s essential to mix it well with a wooden spatula to ensure it’s completely broken up so that it blends evenly with the spices and cooks without forming clumps. We cook it until it begins to brown.
Ahora es momento de incorporar el calabacín que habíamos picado, junto con el azúcar y la salsa de tomate. Incorporamos todo muy bien y dejamos cocinar hasta que el calabacín esté suave y el líquido reduzca.
Now it's time to add the chopped zucchini, along with the sugar and tomato sauce. Mix everything together well and let it cook until the zucchini is tender.
Para el armado del plato con la ayuda de
una cuchara distribuimos el relleno de carne de manera generosa dentro de cada una de las canoas de calabacín. En este punto tratemos de usar un refractario donde queden ajustados para que mantengan la estabilidad y no se volteen.
To assemble the dish, use
a spoon to generously distribute the meat filling inside each of the zucchini “boats.” At this point, try to use an ovenproof dish where they fit snugly so they remain stable and don’t tip over.
Para finalizar, cubrimos nuestras canoas con el queso mozzarella y las llevamos a horno previamente precalentado a 180° para que el calabacín se cocine por completo y el queso se derrita. Al final, prendí por unos minutos el grill de mi horno porque me gusta bien doradita y crujiente.
Retiramos del horno y dejo reposar unos minutos antes de servir.
Finally, we top our canoes with mozzarella cheese and place them in an oven preheated to 180° so the zucchini cooks through and the cheese melts. At the end, I turned on my oven’s broiler for a few minutes because I like it nice and golden brown and crispy.
We remove them from the oven and let them rest for a few minutes before serving.
