Hello friends who love Vegan food, today I will share a traditional Indonesian cake recipe, originating from East Java, Lamongan area, namely Wingko cake. Wingko cake is a traditional Indonesian cake that has a sweet and savory taste.

Wingko cake is a cake made from three main ingredients, namely ripe banana, glutinous rice flour and grated coconut.

There are two ways to cook banana wingko which affect the taste, the first way is by baking the wingko dough, resulting in dry and tasty wingko, when making wingko by baking, usually using sugar. Today I will make banana Wingko by steaming, because the cooking method is steaming, I don't use sugar but use brown sugar. The taste of steamed wingko is chewier than baked wingko.

Apart from the cooking method, the thing that influences the taste of wingko is the grated coconut ingredients, the coconut used is unripe coconut and the white flesh of the fruit is grated. Unripe coconut has a sweeter taste and softer texture. So the resulting steamed Wingko cake is softer too.

Ingredients

The ingredients used to make steamed banana wingko are :

grated coconut from 1 young coconut
3 glasses of glutinous rice flour
4 ripe bananas without seeds
100 grams of brown sugar
1/2 teaspoon of salt

At first I wanted to add water, but the grated coconut has a very soft texture, so I didn't add water.

Preparation

1.Slice the brown sugar thinly, the better, so it blends easily with the other ingredients.

2.Peel the banana skin.

3.Puree the banana, I only used a tablespoon to mash the banana.

4.Add salt to the banana mixture. The function of adding salt is to enrich the flavor and add a savory taste to the banana Wingko cake.

5.Add palm sugar slices to the banana mixture.

6.Stir the mixture until it is well mixed.

7.Add the glutinous rice flour to the banana mixture, stir until evenly mixed and the glutinous rice flour does not have lumps.

8.Add the grated coconut to the banana mixture, stir again until evenly mixed.

9.Now that I have the Wingko banana cake dough, I like the fragrant smell of this Wingko cake dough, the delicious grated coconut mixed with banana and glutinous rice flour, it's time to cook it.

10.Put the mixture into the mold, so it doesn't stick, you can put a little cooking oil on the mold.

How to cook
Heat the steamer, put the mold into the steamer, use medium heat, it took me about 25 minutes to steam this banana wingko cake.

After 25 minutes, I started checking the banana wingko cake, I used a fork to check it, pressed the cake with the tip of the fork, if there was still dough sticking to the tip of the fork, it meant the cake was not cooked. After I checked, the Wingko cake was cooked.
