I have been forcing myself to eat vegan for a long time, but I could not stick to my decision as a result of the habits brought by the society I live in. Although I cannot be completely vegan, I only eat vegan on certain days of the week to make it a habit. But I have been staying at my mother's house for the last few months. Since my mother is a single woman, she was afraid to stay alone at home because of the recent earthquakes. I wanted to come and support her. Since my mom cooks heavier meals, my diet has been very disrupted here. In my own home, I was eating lighter and more vegetables and balancing everything, but that was not possible here.
I have been eating only vegetables for the last three days, even though I am at my mom's house, because I started to feel bad both physically and mentally with the change in my diet. I have digestive problems and feel tired all the time. Since this situation is bothering me day by day, I decided to change my eating routine immediately and asked my mom to respect this! In addition, since I have been interested in Asian cuisine for a while, I have been trying to try some of their recipes. I especially love when they eat "kimchi" while watching Korean TV series. Today, I prepared a vegan recipe for myself, which I think is similar both visually and in terms of flavor, although it is not exactly kimchi. I created my own recipe completely with the ingredients I had at home. And it turned out to be a really delicious dish! I will write the ingredients and recipe below.

First of all, I would like to state this. I adjusted the measurements completely by eye at that moment. I did not prepare it with a certain measure because I adjusted the amount enough for one person. You can adjust according to the number of people by looking at the visuals!
Let's come to the recipe! I had previously boiled some cabbage in boiling water to soften it a little beforehand. Then I took the grated onions into the olive oil and roasted them. I added tomato paste on it and continued to roast it. Then, after adding the rice, I added hot water and spices. And then I added parsley and finally the finely chopped cabbage! I mixed all the ingredients and left it to cook for about 30 minutes. At the end of 30 minutes, my dish was ready and tasted incredibly delicious!
It is very difficult to prepare food by shooting, when I was at home, I was preparing good recipes and publishing them on my blog. And I know that it is very, very difficult to shoot and enter details while cooking!
