Yesterday I decided to make my own Kimchi and to write something about it. I thought why not have it written and posted for HPUD that way today's HPUD would be more meaningful and special.

My brother loves cucumber. I bought a kilo for him but he was not around for the week. I peeled one, prepared it and had a water infused with cucumber after my lunch yesterday. It was refreshing. I was wondering what to do with the remaining cucumbers so I asked Gemini. One of the simplest recipes I found is Oi Kimchi (Cucumber Kimchi) so I decided to give it a try.

Cucumber with Rock Salt

After removing the seeds and cutting the cucumbers into small slices, I added a generous amount of rock salt that would aid in removing the excess water. I did not follow the recipe. This was a major mistake. It said a only teaspoon of salt. I had to rinse the sliced cucumber but it had already absorbed much of the salt. Anyway, I continued with adding the remaining ingredients, fish sauce, ginger, chili flakes and garlic. I also included sliced scallions with the hope that this would help in the absorption of the excess salt.

My Oi Kimchi

After mixing all the ingredients, my Oi Kimchi ala HPUD is almost ready. This time, I followed the recipe. I did not eat the Kimchi right away although it was irresistibly tempting. I fought the urge to eat the kimchi immediately and let it rest for a while to let the flavors blend naturally.
