I hope you guys had a nice weekend. My household did. My oldest turned 14, we took him to a steak house and all the lovely servers serenaded him birthday song, which made him blushed big time. He is one shy boy, so it was just too cute. Then the next day as it was still -46C, we just had to play in the backyard, chugging hot water to the air, and it instantly evaporated into cool steam. Made my youngest happy 馃榿馃榿馃榿馃榿
We are finally working on my library. It's been moved many times in the past 3 years, now finally we decided which area of the house it's gonna be and whatnot, and it's starting to look lovely, so am excited 馃槏馃槏馃槏馃槏
So in short, yep, we had a nice weekend 馃槉
For today's share, I have a delicious yet super simple to prepare, kale and quinoa stir fry. And I kid you not, I always like this kale stir fry and I can have it like almost everyday, whether as is but most of the times I have it with warm rice. However, this time we had it with lamb chop 馃槉
1 c of quinoa (I may have said couscous in the vlog 馃檲馃檴馃檳)
1 bunch of kale
1 purple onion, medium
4 garlic
2 tbsp peanut/sunflower oil
Mushroom granules, to taste
Vegetable rice, to taste
White pepper powder, a pinch
Cook quinoa according to the package
Rip kale from the stem, we want just the leafy green, rinse
Slice thinly onion and garlic
Heat oil, saute garlic and onion until soften and fragrant, stir in kale. Cook until somewhat soften.
Add in quinoa (not couscous 馃ぃ), season
Serve immediately and enjoy 馃槉
