Hello Lovelies!

I mentioned awhile back that I made pumpkin madeleines, and only this morning I had the chance to edit the recordings 馃槄 But before I share it, I hope you had a marvelous Halloween???!!!

I was at work, but through the magic of security camera on our door bell, I could watch some awesome Trick or Treaters! So happy for that 馃槏馃槏馃槏馃槏

That was the 1st time ever that I had to work on Halloween eve and driving home was creepy! No, not because ghosts and goblins were outside, but because all superheroes, princesses, inflatables whatever, running, crossing, out of the blue. Yikes. I had to drive 5-10-20 miles per H max and extra cautious too 馃槵

Anyhoo. Back to baking! Here is Pumpkin Madeleine 馃槏

1 c flour
A generous pinch of salt
Freshly grated nutmeg, a tiny pinch
1/2 tsp ginger powder
1/2 tsp cinnamon powder
1/2 tsp allspice powder
1/4-1/2 tsp BP (watch the vlog!)
50 g unsalted butter
2 eggs
1/2 c sugar
1 tbsp vanilla essence
1/4 c pumpkin puree

Additionals: chopped walnut, chocolate chips, if using

Toppings: white chocolate, hazelnut chocolate, sprinkles, if using

Mix dry ingredients in a bowl

Whip eggs, sugar, and vanilla essence until fluffy

Fold in pumpkin puree

Stir in dry ingredients into wet (if adding walnut or choc chips or a mix of both, here is the time as well)

Fill in greased mold for 3/4 full

Bake on preheated 8-10 mins, cool on rack

If using topping, do it after madeleines are at room temperature.
