Hello, Hello, Hello 馃槉

Anyone is online? 馃榿 I am sure the lot of you are busy with Christmas, gatherings, preparations, wrapping gifts, baking(s), etc. Me? I am sick still. My husband is working, my kids busy with their games, and here I am, watching The Originals on Prime, mending my bloody coughs. When will this damn cold end, blah. 馃槄

The following dish is what I brought to a Christmas party at our local library. It was a potluck style party and this dish is just very simple and easy to prepare, and always a crowd pleaser 馃槏

1 bag of rice vermicelli noodle
2 whole eggs
3 tbsp peanut oil/unsalted butter
1 carrot, sliced thinly
Half a cabbage, slice
250 g skinless, boneless chicken breast, cubed
1/3 c chicken broth/water
Sweet soy sauce to taste,
Chicken bouillon powder, to taste,
White pepper powder, to taste
2 tbsp crushed chives

First you're gonna boil enough water, place the vermicelli into a bowl, pour hot.boil8ng water, let soak until soften for 5 mins, drain

On non stick pan, saute the chicken breasts on low-medium heat, until half cooked, spoon chicken on to the side, add butter or peanut oil, then crack the eggs, scramble.

Add cabbage and carrots, stir. Pour in broth/water, cover with lid. Cook until veggies softened.

Add in softened vermicelli, season with the rest of the ingredients. Adjust flavoring

Serve immediately, top with more crushed chives and/or fried onion.
