This is one of my most requested appetizers. The combination of cheese, spinach, artichoke, and cream cheese tossed together then baked....dairy heaven!
Baked Spinach Artichoke Dip - Tastee Pleasures 2017
1- 10oz pkg frozen spinach ( defrost in microwave and squeeze water)
2-12oz cans artichoke (drain water, roughly chop with knive or pulse in food processor )
20 garlic cloves, peeled and finely chopped
1 medium onion finely diced
1/2 tsp crushed red pepper flakes or 1/4 tsp cayenne pepper
2-8oz pkg cream cheese
1 1/2 cup mayo
1 1/2 cup sour cream
3 cups finely grated parmesan cheese , set aside 1 cup
2 tbsp olive or canola oil
1/4 tsp salt
Heat oven to 375 degrees. Heat oil, sauté onions and garlic until onions are translucent. Add spinach and chopped artichoke, add salt and cook until heated through. Add cream cheese, stir periodically until complety softened. Add mayo and sour cream, stir to combine ingredients. When mixture is hot add 2 cups of parmesan cheese and pepper flakes. Stir and cook for ten minutes on low heat. Taste dip, only add extra salt if needed. Transfer dip to foil pan, sprinkle remaining cheese over dip, bake uncovered until dip is set or golden brown, about 15 - 20 minutes . Serve warm.
