So today, whilst riding the bus on my way home from a History test, I was totally (and retrospectively embarrassingly) engrossed in my phone, searching for inspiration for something to make for lunch.
Now, I had been seeing many creators on Tik Tok (and don't have a tantrum at me for referencing a centralised platform!) speak with much enthusiasm about a dish named Cowboy Caviar. And, I would have titled this recipe after it's original name, except that the word caviar insinuates small portion sizes. And I resent that.
Hence the title: The Cowboy Salad.
This salad, with almost, Mexican like flavours, is to be eaten with your hands, using tortilla chips to scoop up the veggies, beans and fruit (fruit!?) that have been chopped up and packed in.
It's important to note. My expectations from this salad were low, as consequence of the natural scepticism directed towards all that is trendy. However, I stand more than pleasantly suprised by the resulting meal. All that fuss is, in fact, entirely justified.

Dont forget everyone, this is not caviar, this cowboy salad is to be eaten only in unreasonably large quantities, And if it lasts more than a day (which I doubt it will) it will only taste better after all the scrumptious marination.
