The last of the peppers were picked and the garden has been cleaned up for fall.
There were a lot of smaller peppers that did not get that big and some that were enormous like the Yellow Monter variety in the photo above.

I decided I had plenty of them taking up a lot of space in the freezer so it was time to dehydrate the rest.

I used my chopper after washing the peppers into equal sizes so they dry at about the same time.

I use silicone liners so the peppers don't fall through the grids. It is necessary to spread them evenly around the liner.

It did not take long to fill up 4 trays as that is all I had left in the garden.

Can you believe how small the chunks become?

I divided up the amount of dried-up peppers into small batches and vacuum-sealed them for long-term storage.

I wish I had paid attention to how long it took for them to dry completely, but, I did not. I did dry them at 130°F and it was about 6 hours if I remember correctly.
