The raspberries are producing tons of berries. I've already made jam, so now I'm putting the rest up into raspberry syrup for pancakes and French toast. Hubby likes the flavor, so it is a great way to save on the cost of real Maple syrup. To date, I have made two batches, which yielded 6 pints of syrup.
I have to freeze the berries until I have enough to make the syrup. It only takes a few days for me to have 2 quarts to make a batch.
The cucumbers are coming in fast and heavy-laden. I picked 2 pounds in one day and had to make sweet pickles to use them quickly. The others we have been eating chopped up in a chickpea salad.
I got 6-1/2 pint jars from the 2 pounds of cukes for the pantry.
Next up, black beans. I used the last jar in the pantry a few weeks ago, and since I had the canner out, I decided to make a large batch of dried beans. First, I had to soak them overnight, rinse and drain them before cooking them for canning.
I ended up with 9 pints and 8-1/2 pints, which should last me quite a while.
The following day, I needed to tackle the two very large zucchini that I missed.
I shredded them both and put them on parchment paper to freeze overnight. Then I vacuum-sealed them all. I will probably use them for muffins, bread, or patties at a later date.
Lastly, I picked a huge amount of basil before it went to seed. I used the dehydrator to dry it. Then I pulverised it in the food processor with sea salt. Now, I have a pint jar of flavored salt, yay!
It has been a busy few days, and I have cabbage, beets, and more herbs to harvest today. Happy gardening, everyone!
