The weather has been quite hot and humid lately, with some days raining and others extremely hot. This kind of changing weather can easily make you sick. I was thinking of making some honey lemon drink. But I'm too lazy to wash lemons one by one, and sometimes I don't want to store them up after using them all, as they might lose their flavor.
First, I invested in three lemons, which were just right for my small jar. I also bought a jar of honey, so I could store any leftovers. Making lemon in honey requires some research; I watched some YouTube videos and felt confident I could do it. I started by washing the lemons thoroughly and scrubbing them with salt. Unfortunately, I didn't have coarse salt, only fine salt, so I used that instead to exfoliate the lemon zest.
I spent quite a while scrubbing the lemons, then rinsing them with clean water to reduce the bitterness. After that, I sliced the lemons thinly and removed the seeds to prevent bitterness when soaking them in honey. I washed and rinsed the jar I would be using with hot water and let it dry. Then I poured a small amount of honey into the jar and began arranging the thinly sliced lemons, alternating with more honey, until finished. Finally, I closed the lid and left the jar at room temperature for 2-3 days.
My honey lemon drink in a jar is ready! My youngest daughter loves it so much that next time I'll try making honey lemon syrup to mix with soda water, but for now, I'll keep it simple. My little one is excited to try it, but we'll have to wait a couple of days before we open the jar and enjoy this sweet and refreshing honey lemon drink.
