Waking up this morning with a dull mind, thinking of nothing and having no inspiration for the day, this is the best I could come up with.

Trying to adhere to a low carb, gluten free diet sometimes can be challenging. There are days, I want cereal, but I’ve never found a commercial one that fits my needs.

Researching the internet for information, I decided to put together my own recipe for when I get a “cereal craving”.

Actually, I don’t even have a specific recipe, I usually start throwing together things and hope the kitchen sink doesn’t land in there also!

Anyway, I’ll try to tell you what I put together.

First of all…..gather a bunch of nuts…..no, not the people kind, the edible kind!

Pecans, cashews, walnuts, almonds, pistachios, hazelnuts, Brazil nuts, etc. Any kind you like can be used.

Also, seeds such as sunflower, chia, flax, and pumpkin can be incorporated.

Put all these ingredients in a bowl either whole or ground. Unless I’m feeling really industrious, I usually throw them in whole.

Next, I search my spice rack for the ones I think will be good with the nuts and seeds.

Cinnamon is my number one favorite. I also add in nutmeg, allspice, ginger, and whatever else I have. Don’t ask me how much, I have no clue. I start sprinkling and hope I don’t use too much.

Chop any kind of dried fruit, raisins, cranberries or whatever you like and toss in.

Make it tantalizingly tropical by adding pineapple, mango and coconut! How about berry delightful with a mixture of berries or just one that you prefer. As you see in the top picture, I love strawberries. Read about Romancing the Strawberries

Now we need a little sweetener, but processed sugar is definitely out! Any kind of sugar substitutes can be used, but I prefer Sukrin products. They are natural sugar substitutes, with zero calories and no carbs that are absorbed by the body!

What I use for this particular recipe is Sukrin Fiber Syrup Clear, which holds everything together nicely. I also sprinkle a little Sukrin Melis (Icing Sugar) for a little extra sweetness. Again, I have no specific measurements!

Stir all the above mentioned ingridients in a large bowl until well coated and mixed. Spread on a cookie sheet lined with parchment paper and bake at 400 degrees for about 7-10 minutes or until you smell burning!!!
The burning part occurs only if you let it. In other words, keep a close eye on it!

Take out of oven and let it cool. Once cooled and hardened, you can break or crumble into large or small pieces. Store in an airtight container.

Now you have a low carb, gluten and sugar free snack or use as a cereal. Pour on some almond, hemp, or coconut milk for a nutritious breakfast. There is fat involved, but it’s the good kind of fat!

Feel free to tweak this to your particular taste. That’s what I do with about any recipe I make!

Warning: I call this recipe “crack cereal” because it's highly addictive! The more you eat, the more you want, so be careful. I find I spend a lot of time making this stuff!
