Orange and Mango Pudding with Chia Seeds

Good day and Happy Easter Sunday! Apparently, I have an entry for this week's ASEAN Hive Challenge, "An Orange Odyssey". Just last week, I made a fruity pudding which I plan to eat every morning. I already had listed the fruits I would be putting into the pudding. However, I did a replanning after seeing the prices of fruits which led me to sticking with orange and mango.

So here I am with my Orange and Mango Pudding with Chia Seeds! It's fun and very easy to make!

(However, I failed a bit on the orange gelatin but I will be suggesting a solution and alternative as well.)




ORANGE and MANGO PUDDING with CHIA SEEDS

First, we will be making the orange gelatin. Here's what you are going to need.




๐ŸŠ STEP 1: MAKING THE ORANGE GELATIN

Ingredients:


โ€ข 5 Oranges
โ€ข 1 Tbsp Sugar
โ€ข 2 Tbsp Gelatin Powder (Unflavored)
โ€ข 1 Cup Water



Procedure:

#1 Squeeze the oranges and strain so no seeds and pulps will get mixed into the gelatin.

#2 Put the orange juice in a pot and add sugar and water.

#3 Add the gelatin powder and turn on heat. Mix continuously until gelatin powder mixes completely with the liquid.

(The reason why I have three pictures here is that I first tried to add a half tablespoon of gelatin powder but the orange mixture wasn't solidifying in the fridge, so I added a tablespoon and a half more.)

#4 Remove from heat as soon as it becomes warm. Don't let it boil. Transfer it into containers and let it cool down. Then chill it in the fridge until it becomes firm. To make the process faster, put it in the freezer for at least 15 minutes.

#5 Then slice it into cubes. Set aside or you can put it back into the fridge.







๐Ÿงก STEP 2: MAKING THE MILK BASE

Ingredients:

โ€ข 1 Liter Oat Milk
โ€ข 5 Tbsp Gelatin Powder
โ€ข 3 Tbsp Sugar



Procedure:

#1 Put milk in a pot and add sugar.

#2 Then turn on heat and add gelatin powder. Remember to mix it as soon as you put the gelatin and continuously mix until milk gets warm.

#3 Remove from heat as soon as the milk gets warm or before it boils.

You can use any type of milk. I was, in fact, supposed to use soy milk but it wasn't available on the market I've gone to. I opted for oat milk instead. And I don't know why I didn't have a photo for this step. But it's very easy to follow. I know you can do it!




๐Ÿงก STEP 3: COMBINING THE FRUITS AND MILK

Ingredients:

2 Mangoes (cubed)
Chia Seeds
Orange Gelatin (from Step 1)
Milk Base (from Step 2)



Procedure:

#1 Distribute the cubed mangoes and orange gelatin into the container.


#2 Pour the milk base and sprinkle chia seeds on top. If the milk is still warm, let it cool down a bit before putting it inside the fridge.

#3 Chill overnight to let the gelatin set or become firm.

Tastewise, it's good and delicious. The chia seeds on top also makes the texture of the pudding interesting. It's soft with a bit crunch! You can also remove the sugar if you wish for a no-sugar pudding. I just thought of adding some because the oat milk tasted a bit bland for me. It's my first time tasting this type of milk.

Also, I would suggest to use agar or "gulaman" for the orange cubes instead of gelatin because my orange gelatin cubes melted when I poured the warm milk base. The reason why there is a layer of orange gelatin on top. If not, just let the milk base cool down first before pouring into the containers to prevent the orange gelatin from melting.

This is also a perfect snack for the summer season. With the heat index rising up to 50 degress Celsius on some parts of the country, we need something to cool down ourselves. And one that I can think of is this citrusy and milky pudding!
