Got out for a morning walk down to the lake on this #beautifulsunday. It was in the mid 30Fs but the sun was out behind the clouds.
We got one eggplant from our garden this year lol It was our first year growing eggplants. Next year we need to start them earlier. The plants were reasonably healthy but didn't put on fruit or bloom until too far into the season.
We actually brought the one plant with an eggplant inside hoping it would continue to grow but it didn't get any bigger.
So we had one nice eggplant dish lunch. Sauteed with some tomatoes, spinach, garlic plus some oregano topped with feta cheese. Yummy 馃構
