We've been trying more simple suppers recently as we try to keep ingredients and preparation time down to a minimum. I was surprised with how tasty this meal was and it really couldn't be more simple. This is another keto recipe but I decided to service with some rice which goes against the keto thing. Delicious all the same.

The list of ingredients:

  • Pork mince
  • Fine green beans (I just used standard cheap ones)
  • Spring onions
  • Hoisin sauce
  • Chopped red chilli (optional)

As the beans I had weren't that fine, I shoved a little water in the wok and simmered them just for a few moments. I don't think this was essential, but youngest doesn't really like really crunchy veggies. I strained the beans and kept them to one side and wiped out the wok.

After the wok was up to spoking temperature again I added the beans and stir fried for a few minutes then added the pork mince. This was all stir fried together for 4 or 5 minutes until the pork was broken up, browned and was mostly cooked through. The recipe said 4 tablespoons of hoisin sauce but I added double as I was cooking double the mince. A then added a good dash of water to create a sauce with the hoisin. If cooking again I'd slip softening the green beans at the beginning and just add more water here and cook for slightly longer.

The Spring onions were added after mixing the hoisin and water and everything was cooked until the sauce had thickened and coated the mince. That was pretty much it!

I did taste before serving and added a little more hoisin sauce. Not sure this would normally be essential but the sauce I used as a budget variety and all though it tasted fine, I don't think it was as condensed as a more expensive sauce would be.

I like spicy food so added chopped chilli to mine. There was enough left over for a light lunch too! I think the only way to make vegan or veggie would be to swap the mince for a plant based alternative.
