For the last few years I have been making my own mayo, what I find in the store tastes old and usually is packed with other ingredients I do not care for. So I have worked on making my own and found exactly how I like it over the years.

Using Avocado oil and Olive oil 25/75 is how I usually make it, though you can use 100 of ether one if you wanted to. Id use 100% Avacado oil if I could afford it. I set it aside in a glass container (1 cup) for later and add my eggs to the immersible blender container. Without this kitchen power tool, it would take a long time to whip up this mayonnaise. But by using this tool, I can make it in under a minute once everything is measured and placed out.

I add three eggs, apple cider vinegar, turmeric, black pepper, salt, garlic and onion powder. One last touch for flavor is my 100% pain hot sauce. That is what makes Solo's mayo have its soul. I add just a little less than a tablespoon. Though a teaspoon would be a good idea if your not sure how hot you can handle it. This hot sauce is anywhere from 250,000 - 1,000,000 Scoville Heat Units (SHU). Some say its actually 40,600 SHUs but ive had comparable hot sauces and they are much more mild than this stuff. But the flavor it adds is something special and I always add some to my mayo.

Use with caution

After adding my eggs, spices, vinegar and a little bit of hot sauce I get my blender ready. I keep my cup of oil close and start blending until its all mixed in. Then I start slowly pouring the one cup of oil into the immersible blender container while operating the kitchen power tool keeping the mixture going.

Once the oil is all poured in, I use both hands and really work it all together using the immersible blender. After about 10 seconds of vigorous operation its done. I pour the liquid like mix into a mason jar and chill in the refrigerator. By the time it chills it forms a perfect constancy for any meal. Actually I eat it with just about every meal. And a little to much sometimes as I think it caused me to put on some weight.. haha I sure love my mayonnaise.
