Eggplants are heavily underrated, I wasnt a veggies guy until I start eating low carbs, I had to replace and add many things on my meals that I could not eat anymore so my wife started looking up and experimenting with, one of them was Eggplants she found a recipe similar to yours where the eggplant taste and look like potato chips, very tasty 😅
