One day on the internet, I found a photo of an egg-processed food called Shakshouka, a Middle Eastern cuisine. It looked so delicious and pretty. I immediately became obsessed with making it (and eating it, of course).
I searched YouTube and Cookpad for the recipes and found out that the main ingredients are eggs and tomatoes. There are many variations for the mixture: mushrooms, minced meat, cheese, etc.
On the first attempt to make shaksouka, I thought it was just a trial so I didn't take the photo of my preparation or the cooking process. At the end, I wasn't happy with the result. It was a failure, although it is still edible.
For the second attempt, I made some improvements. Since there weren't enough tomatoes in my fridge, I used tofu to make it fuller.
And, here it is! My version of Shakshouka! I think it's pretty good. So proud of myself. 😁
For that 2nd attempt, once again, I didn't take the preparation or cooking process photos, because it was just another trial from the previous experiment. I think I'm going to make the complete photo when I make this dish again next time.

SHAKSHOUKA WITH SLICED TOFU
The Ingredients
- 3 eggs (depending on the size of the Teflon)
- 1/2 clove of onion (1 clove is ok too)
- 2 cloves of garlic (or more)
-1 tomato or more - 2 chilies (Actually it's not in the recipe. This is my own addition. The amount of chili is according to your taste)
- 2 tbsp tomato sauce
- Tomato paste. I skipped this one, and I replaced it with chili sauce that I made a day before (contents of chilies, tomatoes, onions, and garlic).
- Tofu (optional. You can substitute mushrooms, minced meat, etc.)
- Salt and seasoning to taste
- Pepper powder for sprinkling (optional)
- Celery leaves for sprinkling (can be replaced with scallions or oregano)
- Oil for frying 1-2 tbsp.
How to Cook
- Thinly slice the onion and garlic. Cut the tomatoes, chilies, tofu, and celery into small pieces.
- Fry the tofu until it's half cooked. Remove it and set it aside.
- Heat the cooking oil and sauté the onion and garlic until they are half wilted. Don't overcook.
- Add the tomatoes and chilies and mix well. Stir for a while.
- Stir in the tomato sauce, chili sauce (or tomato paste), fried tofu, and salt to taste. Stir for a while.
- Taste it. If it's just right, reduce the heat.
- In the seasoning that has been mixed well, make 3-4 holes until the bottom of the Teflon is visible. Crack an egg into each of the holes.
- Distribute the pepper and celery leaves evenly. Don't stir. Cover the teflon.
- After the eggs are cooked or half cooked (according to your taste), shakshouka is ready to be served.
