Sa Wad Dee Ka 馃檹 Hive community ^^

A months ago I did show you guys how to cooked the shrimp paste which is commonly used around Southeast Asia so today I'll step up to the another level by making Shrimp Paste Fried Rice or Khoa kluk Kapi in Thai words. 馃榾

馃嚬馃嚟 Khao means Rice which Kluk is to Mix and Kapi refers to Shrimp Paste. 馃尭

Shrimp Paste Fried Rice is a traditional Thai recipe that popular for household cooking which is difficult to find at street vendors where you can sit and eat but mostly is buy and takeaway.

A plate of Khao Kluk Kapi begins with Thai rice stir fried shrimp paste along with various topping which includes Bilimbi fruits, omelet, red onions, dried shrimp, sweet pork, Chinese sausage, chili, cucumbers and long beans.

The dish can arranged for the person or serving on large plate on table and add on their own preference.

The main ingredients is stirred fried rice with aromatic funky shrimp paste and mixed with red shallots and Dried shrimp that wok over high heat and not too much oil to avoid the soggy fried rice.

Sweet pork is made by stewing sliced pork belly with garlic, salt and soy sauce. It鈥檚 a wonderful side dish to eat with Shrimp paste fried rice and get along and balancing between salty and sweetness.

Bilimbi Fruit are extremely sour which right now is really rare and hard to find in the market and slightly grow in the household garden so all Khoa Kluk Kapi that sell out there using sour mango instead. The bilimbi pant is full of nutrients and rich in vitamins A and C and potassium.

The ingredients are very simple. It's required only a few components and preparation which is totally worth to cook. Such a beautiful dish, right?

There're a list of ingredients here!

  • 2 Cup Steamed Jasmin Rice
  • 1/4 Cup Shrimp Paste
  • 1 Tablespoon Pork Oil
  • 1 Red Shallots
  • 1 Tablespoon Dried Small Orange Shrimp
  • 300 Gram Pork Belly
  • 1 Teaspoon light Soy Sauce
  • 1 Teaspoon Seasoning Soy Sauce
  • 1 Teaspoon Dark Soy Sauce
  • 1/2 Teaspoon Black Pepper
  • 3 Cloves Garlic
  • 3 Tablespoon Palm Sugar
  • 2 Long Bean
  • 1 Lime
  • 5 Red Chili
  • 5 Bilimbi
  • 1 Chinses Sausage
  • 2 Egg
  • 2 Tablespoon Cucumber

Khao Kluk Kapi Instructions!

Stewed the Sweet Pork Belly first

  • Minced the garlic and smash the black pepper.

  • Cut half the pork and sliced it into equal pieces.

  • Drop the pork belly into the hot pan over medium high heat and drop the garlic, pepper, all sauces and water and simmer it until water reduce into sticky glaze and set aside.

Time to make the Sliced Egg

  • Beaten the egg

  • Pour the oil into the pan and drop the beaten egg and spread the egg all over the pan and flipped the egg after cooked.

  • Roll the egg sheet and sliced it and set aside.

  • Pour the oil over high heat then drop the dried shrimp and fried it until golden yellow crispy and set aside.

Time to make the Sliced of Chinese Sausage

  • Sliced the Chinese sausage into equal pieces.

  • Drop the Chinses sausage into the wok and pour the water and stirred fried it until the water gone and turn into the oil and fried it until the Chinese sausage cooked and crispy.

Let's prepare the Veggi

Bilimbi Preparation!

  • Sliced the Bilimbi and using the small knife and take the seed away and sliced it into small stick.

Long Bean Preparation

  • Sliced the long bean into small pieces

Chili Preparation

  • Sliced the chili into small pieces

Red Shallots Preparation

  • Dice the Red Shallots into small cube.
  • Sliced the Red Shallots into small pieces.

Stirred Fried the Rice!

  • Pour the oil into the wok over low heat and drop the shrimp paste into the wok and whisk it gently until the shrimp paste melt and drop the dice of red shallot and stirred it together and drop the steam rice.

  • Heat up the heat to high heat and stirred the rice quick and gentle until rice get burn a bit and drop the orange dried shrimp and whisk it together.

How to Decorated the Plate.

  • Press the fried rice into the small bowl and drop it into the serving plate.

  • Place the sliced of egg, long bean, red shallots, Chinese sausage, bilimbi , cucumber, chili and fried dried shrimp.
