pumpkin is a vegetable that brings warmth and nourishment to our meals. In Sri Lankan cuisine, it is beautifully transformed into a soft, creamy curry that pairs perfectly with rice and other traditional dishes. Its naturally sweet flavor, tender texture, and richness in nutrients like beta-carotene, fiber, and vitamins make it both delicious and healthy. This curry is not only comforting but also a gentle reminder of the age-old home-cooked traditions passed down through generations.

Ingredients...

⭐️ pumpkin 300g.
⭐️ 1 1/2 cup of coconut milk.
⭐️ A finely chopped onion.
⭐️ 2 finely chopped green chilies.
⭐️ 2 cloves garlic, finely chopped.
⭐️ Curry leaves.
⭐️ Rampe.
⭐️ 2 Teaspoon of Roasted curry powder
⭐️ 1/2 Teaspoon of curry powder.
⭐️ 1/2 Teaspoon of turmeric powder.
⭐️ Salt as needed.
⭐️ 1/2 teaspoon of Fenugreek seed.
⭐️ 2 Tablespoon of Coconut oil.
⭐️ 1/2 teaspoon of mustard powder.

The order of preparation.

First, wash and clean the pumpkin thoroughly and cut it into pieces. In the meantime, slice the onions, garlic, and green chilies.

Next, take a pan and add about two tablespoons of coconut oil. Place it on the stove and allow the oil to heat. Once hot, add the garlic, onions, curry leaves, pandan leaf, and all the spices, and mix well. Sauté for about 2 minutes until fragrant.

Next, add the pieces of pumpkin to the pan and mix well.
Then, add a little coconut milk and combine everything thoroughly.
After mixing, cook the curry for about 7 to 8 minutes, then remove it from the heat.
You can also add about a teaspoon of sugar to enhance the flavor of the curry, if desired.
