It's been a while since I last posted, we are so busy this past few days and my child got sick so I need to take care of her.
Bicol express have 3 main ingredients: Pork, Alamang (balaw in Bicol) and lots of Chili. Alamang is made of small shrimps soaked in lots of salt.
Ingredients:
500 grams of Pork, I used the belly part.
1/3 Cup of Alamang, you can add more if you want but too much can make the dish too salty.
Chili, there is no measurement 'cause it's all up to you. Of course don't forget the garlic and onion.
2 Cups of Coconut Cream (Kakang Gata/Unang Piga), you may need another cup of coconut milk for softer meat.
*Oil for sauteing
*Salt and pepper to taste
Let's cook!
Sautee garlic until golden brown , and onion until translucent and fragrant.

Add the pork, let it simmer until light brown.
Add the coconut milk (pangalawang piga), if you don't have this you can use water instead. Simmer until slighty soft.
Add the coconut cream and simmer until meat is soft.
When the oil is starting to come out, add the chilis and pepper. Simmer for a minute then taste it. You can also add a teaspoon of sugar to balance the taste but I don't add any.
We're done, this is Bicol Express ala Rod.
