Hello foodies, cómo van? Hoy quiero compartir con ustedes una receta que para mí no es una receta cualquiera; es un viaje directo a mi tierra, a los olores de mi infancia y al recuerdo de mi papito. Como muchos saben, soy de Güiria, un pueblito en el oriente de Venezuela, específicamente en el Golfo de Paria donde nuestra cultura se mezcla con la herencia antillana y nos regaló una riqueza gastronómica increíble, y aunque mi papá era el experto en la cocina, hago mi mejor esfuerzo por replicar los platos tradicionales para que mis hijos aprendan a amar esa herencia Güireña que corre en sus venas.

Así que inspirado en su sazón (y un poquito de investigación), hoy les traigo al rey indiscutible de las fiestas en Güiria, un Tarkarí, que en esta oportunidad es de pato, al auténtico estilo Güireño.

Hello foodies, how are you doing? Today I want to share a recipe with you that, for me, isn’t just any recipe; it’s a journey straight back to my homeland, to the scents of my childhood, and to memories of my dad. As many of you know, I’m from Güiria, a small town in eastern Venezuela, specifically on the Gulf of Paria, where our culture blends with our Antillean heritage and has given us an incredible culinary richness. And although my dad was the expert in the kitchen, I do my best to recreate traditional dishes so my kids can learn to love that Güireña heritage that runs through their veins.

So, inspired by his seasoning (and a little bit of research), today I’m bringing you the undisputed king of parties in Güiria: a Tarkarí—this time made with duck, in authentic Güireño style.


El Tarkarí es pura magia caribeña en un bocado y según mis investigaciones llegó a Güiria de la mano de los trabajadores indios que llegaron a Trinidad y Tobago en el siglo 19 con su deliciosa masala, y que cruzó a mi pueblito gracias a lo cerquita que están, y junto con el ají dulce y los aliños criollos dieron como resultado esta delicia llamada Tarkarí, que en Güiria se aplica para cocinar casi que cualquier proteína.

La magia de este plato está obviamente en la combinación del curry y la leche de coco, que juntos dan como resultado un sabor simplemente increíble, y lo genial de usar pato es que la carne absorbe de manera increíble la cremosidad de la leche de coco que junto con un toque de jengibre, hacen de este plato la estrella de la cocina Güireña, y sin más demora, pongamos manos a la obra!

Tarkarí is pure Caribbean magic in every bite, and according to my research, it came to Güiria thanks to the Indian workers who arrived in Trinidad and Tobago in the 19th century with their delicious masala, and made its way to my little town thanks to how close they are, and together with sweet chili peppers and Creole seasonings, they created this delicacy called Tarkarí, which in Güiria is used to cook almost any kind of protein.

The magic of this dish obviously lies in the combination of curry and coconut milk, which together create a simply incredible flavor. And the great thing about using duck is that the meat absorbs the creaminess of the coconut milk incredibly well—which, along with a touch of ginger, makes this dish the star of Güiria’s cuisine. So, without further ado, let’s get started!

Procedimiento

Lo primero que haremos para la preparación de nuestro Tarkarí de pato estilo Güireño es marinar las piezas de pato y para esto las colocamos en un bol grande y agregamos el jugo de limón, sal, pimienta, la mitad del ajo machacado y una cucharada de curry. Mezclamos muy bien para que la carne se llene de todos los sabores y la dejamos marinar en la nevera por al menos 30 minutos y mientras esto sucede procesamos todos los vegetales.

The first step in preparing our Güireño-style duck tarkari is to marinate the duck pieces. To do this, place them in a large bowl and add the lemon juice, salt, pepper, half of the crushed garlic, and a tablespoon of curry powder. Mix thoroughly so the meat absorbs all the flavors, then let it marinate in the refrigerator for at least 30 minutes. While it’s marinating, prep all the vegetables.


Una vez pasado el tiempo de marinado, viene uno de los pasos más importantes y es "despertar" las especias, y lo que hacemos es calentar un buen chorro de aceite en una olla profunda a fuego medio y agregamos la cucharada de curry restante junto con el comino en el aceite y revolvemos rápidamente por 10 o 15 segundos, súper atentos de que no se queme.

Inmediatamente después, incorporamos todos nuestros vegetales (la cebolla, el pimentón, el resto del ajo, los ajíes dulces, el jengibre y el culantro). Sofreímos por aproximadamente 7 minutos o hasta que estén bien suavecitos. Este es un plato para cocinar con mucha paciencia gente, así que cero apuros!

Once the marinating time is up, one of the most important steps is to "awaken" the spices. To do this, heat a generous splash of oil in a deep pot over medium heat, add the remaining tablespoon of curry powder along with the cumin to the oil, and stir quickly for 10 to 15 seconds, being very careful not to let it burn.

Immediately afterward, add all the vegetables (the onion, bell pepper, the rest of the garlic, the sweet peppers, the ginger, and the cilantro). Sauté for about 7 minutes or until they’re nice and tender. This is a dish that requires a lot of patience, folks, so take your time!


A continuación, agregamos las piezas de pato marinadas a la olla con todos sus jugos, subimos el fuego a medio-alto y cocinamos junto con el sofrito por 10 minutos para que se impregne bien del color y sabor del curry Tanscurrido este tiempo agregamos agua caliente o caldo hasta cubrir casi por completo el pato. Next, add the marinated duck pieces to the pot along with all their juices, turn the heat up to medium-high, and cook them with the sautéed mixture for 10 minutes so they absorb the color and flavor of the curry. After this time, add hot water or broth until the duck is almost completely covered. Cover the pot, reduce the heat to low, and let it simmer slowly for about an hour, checking occasionally.


Una vez el pato esté suave destapamos la olla y agregamos la taza de leche de coco, mezclamos bien y dejamos cocinar destapado a fuego medio hasta que la salsa reduzca, espese y tome esa consistencia que caracteriza a un buen tarkarí de mi tierra. Antes de apagar rectificamos la sal y retiramos del fuego.

Once the duck is tender, uncover the pot and add the cup of coconut milk. Stir well and let it cook uncovered over medium heat until the sauce reduces, thickens, and reaches that characteristic consistency of a good tarkarí from my homeland. Before turning off the heat, adjust the salt to taste and remove from the heat.


Como buena güireña, obviamente acompañé este Tarkarí con bola de plátano (puré de plátano verde), junto con un poco de arroz con coco, y por supuesto plátano frito. El resultado fue un plato jugoso, súper especiado y cargado de nostalgia. Un verdero pedacito de Güiria en cada bocado, tan pero tan rico, que mi mamá no tuvo quejas 😂

As a true Güireña, I obviously served this Tarkarí with bola de plátano (mashed green plantains), along with some coconut rice, and of course, fried plantains. The result was a juicy, super-spicy dish brimming with nostalgia. A true little piece of Güiria in every bite—so, so delicious that even my mom had no complaints 😂
