Por estos lados la cocina no se detiene, y hoy estoy más que feliz de compartir con ustedes una receta súper especial ya que esta vez el chef de la casa fue mi Matías, quien tenía rato diciendo que quería preparar pasta desde cero y finalmente el día llegó, y por aquí les vengo a compartir la receta de estos deliciosos cappellettis de atún en salsa de limón y cilantro que quedó súper deli. Es una receta reconfortante, hecha con mucha paciencia y amor, ideal para consentir a la familia con pasta fresca hecha en casa.

Over here, the kitchen never stops, and today I’m more than happy to share a super special recipe with you, since this time the chef of the house was my Matías, who’d been saying for a while that he wanted to make pasta from scratch—and finally the day arrived. So here I am to share the recipe for these delicious tuna cappellettis in a lemon and cilantro sauce, which turned out absolutely delicious. It’s a comforting recipe, made with lots of patience and love—perfect for treating the family to fresh, homemade pasta.
Esta es la primera vez que hacemos pasta fresca en casa, aunque las ganas siempre han estado, pero fue la insistencia de Matías lo que nos llevó por fin a hacer nuestro primer intento, y siii, hacer pasta rellena desde cero puede parecer un reto, pero con la ayuda de nuestra KitchenAid para trabajar la masa el proceso fue bastante sencillo.
El relleno que utilizamos para estos cappellettis fue atún enlatado al que solo agregamos un buen sofrito de cebolla y pimentón con un toque de mayonesa que le aportó una cremosidad espectacular, y para completar nuestro súper platillo, preparamos una salsa con crema de leche, limón y cilantro fresco que quedó para chuparse los dedos.
This is the first time we’ve made fresh pasta at home—we’ve always wanted to, but it was Matías’s persistence that finally led us to give it a try. And yes, making stuffed pasta from scratch might seem like a challenge, but with the help of our KitchenAid to knead the dough, the process was actually quite simple.
The filling we used for these cappellettis was canned tuna, to which we simply added a good sauté of onion and paprika with a touch of mayonnaise that gave it a spectacular creaminess. To top off our amazing dish, we prepared a sauce with heavy cream, lemon, and fresh cilantro that was absolutely finger-licking good.
400 grs de harina de trigo
4 huevos grandes
1 cucharadita de sal
1 cucharada de aceite de oliva
Para el relleno
2 latas de atún bien escurridas
1 cebolla mediana cortada en cubos bien pequeñitos
1/2 pimentón rojo cortado también finamente
1 cucharada de mayonesa
1 cucharada de aceite de oliva
Sal, pimienta y una pizca de nuez moscada al gusto
200 ml de crema de leche
1 cucharada de margarina
Ralladura de 1/2
1 cucharada de jugo de limón
1 ramita de cilantro fresco cortado finamente
Sal y pimienta negra al gusto
Ingredients
For the dough
400 grams of wheat flour
4 large eggs
1 teaspoon of salt
1 tablespoon of olive oilFor the filling
2 cans of tuna, well drained
1 medium onion, cut into very small cubes
1/2 red bell pepper, also finely chopped
1 tablespoon of mayonnaise
1 tablespoon olive oil
Salt, pepper, and a pinch of nutmeg to tasteFor the lemon-cilantro sauce

1 tablespoon margarine
Zest of 1/2
1 tablespoon lemon juice
1 sprig fresh cilantro, finely chopped
Salt and black pepper to taste
Para la masa de nuestros cappellettis agregamos en el bol de la KitchenAid la harina y la sal, seguidamente abrimos un espacio en el centro y añadimos los huevos y el aceite de oliva. Utilizando el batidor plano (paleta o lira), mezclamos a velocidad 2 por un minuto hasta que la mezcla se vea como arenosa.
To make the dough for our cappelletti, add the flour and salt to the KitchenAid bowl. Next, make a well in the center and add the eggs and olive oil. Using the flat beater (spatula or lyre), mix on speed 2 for one minute until the mixture looks sandy.
Una vez tenemos esa textura cambiamos la paleta por el gancho de amasar y mezclamos a velocidad 2 por 7 minutos, hasta que tengamos una masa firme, lisa y elástica que se desprenda del bol.
En este punto retiramos la masa del bol, hacemos una bola con ella y la envolvemos muy bien en papel film o en una bolsita bien apretada y dejamos descansar a temperatura ambiente por un mínimo de 30 minutos.
Once we have that texture, we swap out the paddle attachment for the dough hook and mix on speed 2 for 7 minutes, until we have a firm, smooth, and elastic dough that pulls away from the bowl.
At this point, remove the dough from the bowl, shape it into a ball, wrap it tightly in plastic wrap or a tightly sealed bag, and let it rest at room temperature for at least 30 minutes.
Mientras la masa descansa aprovechamos para preparar nuestro relleno de atún, y para ello calentamos el aceite de oliva en una ollita y sofreímos la cebolla junto con el pimentón y una pizca de sal a fuego bajo hasta que estén bien cocidos y súper suaves para evitar que rompan la masa.
Una vez el sofrito está en el punto deseado, dejamos enfriar y agregamos el atún escurrido y la mayonesa. Condimentamos con pimienta y la pizca de nuez moscada. Mezclamos hasta lograr una pasta compacta y reservamos en la nevera.
While the dough is resting, we’ll take this opportunity to prepare our tuna filling. To do this, heat the olive oil in a small pot and sauté the onion along with the paprika and a pinch of salt over low heat until they’re thoroughly cooked and very soft, to prevent them from tearing the dough.
Once the sofrito has reached the desired consistency, let it cool, then add the drained tuna and mayonnaise. Season with pepper and a pinch of nutmeg. Mix until you have a thick paste, then set aside in the refrigerator.
Para armar nuestros Cappellettis de atún cortamos el bollo de masa en 4 partes y dejamos el resto tapado para que no se nos seque. Luego con un rodillo (si tienes la maquinita puedes usarla!) estiramos la masa sobre la mesa limpia, completamente seca y espolvoreada con un poco de harina y estiramos hasta que esté muy finita, aproximadamente 1 mm.
Seguidamente con la ayuda de un cortador redondo (o un vaso), cortamos la masa en círculos, agregamos con una cucharita pequeña un poco de relleno en el centro, humedecemos la mitad del borde con una gota de agua, doblamos haciendo una mini empanadita y nos aseguramos de sacar todo el aire para que no se revienten al cocinar.
Finalmente apretamos muy bien los bordes para sellarlos y unimos las dos puntas hacia atrás para darle la forma clásica del capelleti, y vean que bonitos nos quedaron, sobre todo para ser nuestra primera vez!
To make our Tuna Cappelletti, cut the dough ball into 4 pieces and keep the rest covered so it doesn’t dry out. Then, using a rolling pin (if you have a pasta machine, feel free to use it!), roll out the dough on a clean, completely dry table sprinkled with a little flour until it’s very thin—about 1 mm.
Next, using a round cutter (or a glass), cut the dough into circles; use a small teaspoon to add a little filling to the center; moisten half of the edge with a drop of water; fold it over to form a mini turnover, making sure to squeeze out all the air so they don’t burst while cooking.
Finally, press the edges together firmly to seal them, and bring the two ends together at the back to give them the classic capelleti shape. Look how pretty they turned out—especially for our first time!
Para la preparación de nuestra salsa de limón y cilantro, derretimos la margarina en una sartén profunda a fuego medio bajo junto con la ralladura de limón por 30 segundos. Y seguidamente agregamos la crema de leche, la sal y la pimienta y cocinamos mezclando de vez en cuando por 3 o 4 minutos hasta que espese un poco y luego apagamos y reservamos.

To make our lemon and cilantro sauce, melt the margarine in a deep skillet over medium-low heat along with the lemon zest for 30 seconds. Then add the heavy cream, salt, and pepper, and cook, stirring occasionally, for 3 or 4 minutes until it thickens slightly. Turn off the heat and set aside.
En este punto ya estamos listos para cocinar los capelletis en abundante agua hirviendo con sal. Y recordemos que al ser pasta fresca se cocinan bastante rápido, así que cuando vean que comienzan a flotar, los dejan cocinar por unos 8 minutos aproximadamente.
Una vez transcurrido ese tiempo pasamos nuestros capelletis de atún a la sartén de la salsa y cocinamos a fuejo bajo. Agregamos el cilantro fresco picado y el jugo de limón y mezclamos con mucha delicadeza por un minuto, y en este punto estamos listos para servir y disfrutar.
At this point, we’re ready to cook the capelletis in plenty of boiling salted water. And remember that since this is fresh pasta, it cooks fairly quickly, so when you see them start to float, let them cook for about 8 minutes.
Once that time has elapsed, transfer the tuna capelletis to the pan with the sauce and cook over low heat. Add the chopped fresh cilantro and lemon juice, and stir very gently for one minute. At this point, you’re ready to serve and enjoy.
Les cuento que estos capelettis de atún con salsa de limón y cilantro nos quedaron demasiado ricos, y eso que se trataba de nuestra primera vez haciendo cualquier tipo de pasta desde cero, pero no les niego que vivimos momentos de terror al llevarlos a la olla, al punto que Mati y yo no nos separamos ni un segundo del fuego rogando a Dios que no se abrieran ni explotaran, y por dicha nuestras súplicas fueron escuchadas, así que si nosotros pudimos, ustedes pueden!
I have to tell you that these tuna capeletti with lemon and cilantro sauce turned out absolutely delicious, and that was even though it was our first time making any kind of pasta from scratch. But I won’t deny that we had some scary moments when we put them in the pot—so much so that Mati and I didn’t leave the stove for a single second, praying to God that they wouldn’t split open or explode.
