Hey guys, how was your weekend? I hope you had a great time. Today I want to share our Sunday lunch with you—it was pretty simple because, to be honest, I was feeling a little lazy, so I went with something quick (or at least somewhat quick) that we love. It’s chicken cutlets, but as you know, I love experimenting in the kitchen, and today was no exception— the result was some super-crispy chicken cutlets, made with a combined breading technique that you’re going to love.

As I mentioned above, I made these super-crispy chicken cutlets using a combination of breading, starting with the spiced wheat flour batter—which I’ve absolutely loved ever since I first tried it and use almost every time I make fried chicken—but I wanted to complement it a bit with breadcrumbs, which I think give the cutlets an incredible crunch.

The magic of this dish lies precisely in the two-step process: first, a well-seasoned liquid marinade that penetrates the meat, and then a coating of flavored breadcrumbs that creates an incredible crust when fried. And now, without further ado, let’s get to the recipe.

Tomillo / Thyme1 cucharadita / 1 tsp
Curry / Curry1 cucharadita / 1 tsp
Pimienta / PepperAl gusto / To taste
Páprika picante / Hot paprikaAl gusto / To taste
Sal / SaltAl gusto / To taste
Aceite para freír / Frying oilCantidad necesaria / Necessary amount

Procedimiento/Procedure

To begin our preparation, the first thing we’ll do is make the liquid mixture. To do this, in a bowl, add the wheat flour along with the salt, pepper, hot paprika, thyme and curry. Next, we’ll gradually add water until we have a thick mixture. This will be the base that gives our chicken its distinctive flavor.

Next, add the chicken breast fillets to the mixture and stir well so they are completely coated. Refrigerate for 30 minutes.

In the meantime, we’ll prepare the dry mixture, which in this case is breadcrumbs with thyme—which, by the way, I make from scratch. I slice the bread, toast the slices, and once they’re ready, I put them in the food processor with thyme, salt, and pepper. We pulse it, and that’s it. We have our dry mixture.

Once our milanesas have finished resting, we take them out of the refrigerator, and we’re ready to start breading them, so we add the flavored breadcrumbs to a convenient container and get to work!

Simply remove the chicken breast pieces from the marinade one by one, place them in the bowl with the breadcrumb mixture, and coat them on both sides until they’re well covered.

Next, we'll cook our chicken cutlets. To do this, add enough oil to a deep skillet over medium heat, and once the oil is hot, cook the cutlets for about 5 to 6 minutes on each side until golden brown. The cooking time will depend on the thickness of your cutlets.

Once they're done, we take them out and let them cool on a wire rack to make sure they stay nice and crispy until it's time to enjoy them.

As you can see, it's a pretty simple recipe to make, and the mixed breading turned out absolutely delicious with that hint of spice from the paprika and the aroma and flavor of thyme and curry in the crust. It's definitely a fantastic option for when we want to enjoy something tasty at home without the hassle of time-consuming preparations.
