Avalase Unda is a traditional dish, in use since my Great grand mother's time. Those days ,people had their own paddy fields and produced more than enough rice for them to use. Apart from the three meals, they made a lot of dishes using rice , as snacks also.
Avalase unda can be used as a snack or even as a dessert ,since it is very sweet to taste.
Ingredients:
Raw rice(white rice) - 1/2 kg
Grated coconut -1
Sugar -1/2 kg
Lemon - 1
water -2 1/2 c
Dried ginger - a small piece
cumin seed -1 tsp
Roasted cardamon powder -1 tsp
Salt - 1/4 tsp
Gingely seeds - 1 1/2 tsp
Method:
Soak the rice for 5-6 hrs and grind it into a granulated form.
Roast the granulated rice, grated coconut ,dried ginger and cumin seed together , by stirring continuously until it turns into golden brown color.
Grind the mixture ,once again, to powder the coconut lumps also.
Gingely seeds and salt can be added into this and mix well.
( This Avalase powder is also readily available in shops to buy. )
Put the sugar in a bowl and add water and stir well to dissolve the sugar.
Squeeze the lemon and add the juice with sugar and water.
Leave the mixture overnight .
Boil the sugar and water mixture slowly ,until it becomes a syrup.
Add the powdered cardamon into the syrup.
Leave the syrup to be slightly cool .(The syrup should be thick enough to bind the powdered ingredients)
Take 1 tbsp syrup into a separate bowl , when cool,add one spoon of powdered ingredients into this ,stir and mix.
The ball should be firm to touch,but not too hard.
If it is binding well ,the syrup is ready to use, if not , boil a few more minutes .
The balls are made by hand,so syrup should not be too hot.
Once the whole mixture is made into balls, these balls can be rubbed again with a bit of dry powered ingredients.
Allow it to cool well and store them in an airtight container.
