I'm back with a new recipe that's very easy to make and requires few ingredients, which are inexpensive and therefore easy to find. It's a delicious plantain pie, where I combined wheat flour and oat flour.

Ingredients:

  • 3 cups of water
  • One ripe plantain
  • 100 grams of oat flour
  • 2 tablespoons of self-rising wheat flour
  • Salt to taste
  • Oil
  • Ham and cheese for the filling

Preparation:

I chopped the plantains into pieces, leaving the skin on to give the dough a better consistency. I put them in a pot to boil, let them come to a boil, and checked with a fork to make sure they were soft. I removed them from the heat, let them cool, peeled them, and mashed them with a fork.

I added half a cup of water and a pinch of salt. I gradually added the oatmeal, kneaded it, and then added two tablespoons of self-rising wheat flour. This mixture will make the empanadas fluffy.

When the dough reached the right consistency, I divided it into four equal pieces and proceeded to assemble my four empanadas on a plate, covered with a plastic bag and a touch of oil.

I rolled out the dough, added the filling, closed them, left the edges rustic so they would be crispy, and placed my empanadas two by two in a pan with hot oil. When they turned golden brown, I removed them and placed them on a plate. They turned out spectacular.

Vuelvo con una nueva receta muy fácil de realizar, además posee pocos ingredientes, los cuales resultan económicos y por lo tanto fáciles de ubicar. Se trata de una deliciosa empanada de plátano, donde combiné harina de trigo y de avena.

Preparación:

Piqué el plátano en pedazos, con su concha para tener una mejor consistencia al momento de elaborar la masa. Los puse a sancochar en una olla, dejé que hirviera y comprobé, con un tenedor, que estuvieran blandos. Retiré del fuego, dejé enfriar, saqué las conchas y trituré con un tenedor.

Agregué media taza de agua y un punto de sal. Paulatinamente adicioné la harina de avena, amasé y luego le puse dos cucharadas de harina de trigo leudante. Con esta mezcla nos quedarán las empanadas esponjosas.

Cuando la masa adquirió la consistencia adecuada, la dividí en cuatro pedazos iguales y procedí, en un plato, con una bolsa plástica encima y con un toque de aceite, a armar mis cuatro empanadas.

Extendí la masa, puse el relleno, cerré, les dejé las orillas rústicas para que queden crujientes, y fui colocando mis empanadas de dos en dos en un sartén con aceite bien caliente. Al adquirir un color dorado, retiré y puse en un plato. Quedaron espectaculares.
