Using a whisk, I added the flour and a pinch of salt, stirring constantly until it thickened. When it came to a boil and reached the desired consistency, I turned off the heat. I wanted to simplify this sauce; on other occasions, I’ve added nutmeg and grated onion, two ingredients that significantly enhance the flavor.

Later, with the potatoes and pumpkin still warm, I drained the excess water from the vegetables through a colander. Then I mashed them to make the purée, leaving some larger chunks to add texture to each bite.

The final step was to make a hole in the center of the mashed potatoes and pour the béchamel sauce into it—it looked just like a volcano. I grated some cheese on top and enjoyed a light but flavorful lunch.

Para mi almuerzo de hoy preparé un delicioso puré de papas con auyama, vegetales cuyos sabores se combinan muy bien. Añadí salsa bechamel a esta preparación, misma que aportó cremosidad, y para completar agregué queso blanco rallado para darle un toque especial a esta receta.

Posteriormente, con las papas y la auyama tibia, retiré el exceso de agua de las verduras a través de un colador. Entonces procedí a triturarlas para hacer el puré, dejé algunos trozos grandes para sentir más textura en cada bocado.

El último paso fue realizar un agujero en el centro del puré y allí vertir la salsa bechamel, dio la impresión de un volcán. Rallé queso por encima y disfruté de un almuerzo ligero pero con mucho sabor.
