Assalam o Alaikum everyone
How are you all? I hope you are doing well and having a lovely day. Today I am sharing one of my family’s favorite recipes with you Aloo Paratha. These parathas are soft, flavorful, slightly spicy, and so delicious that it is difficult to stop at just one.I usually make a good quantity because everyone at home enjoys them. They are perfect for breakfast, lunch, dinner, or even with a cup of hot tea.

Ingredients

For the potato mixture, you will need:
Potatoes – about 8 to 9
Salt – according to taste
Mixed spice – according to taste
Turmeric powder
Cumin
Coriander
Fresh green coriander – finely chopped
Green onions – finely chopped
2 onions – finely chopped
For the dough:
Flour – as required
Salt – according to taste
Baking powder – a little
The prepared potato mixture

For cooking:

Desi ghee – as required
You can adjust the quantity of potatoes and spices according to your taste. If you love potatoes, you can always add a little more.

Preparing the Potato Mixture

First, put the potatoes on the stove to boil. Cook them until they become completely soft and tender.Once the potatoes are boiled, let them cool slightly and then peel them. Mash the potatoes really well so there are no large pieces left.
Now add your spices. I used mixed spice, salt, turmeric, cumin and coriander. You can adjust the spices according to how spicy and flavorful you like your parathas.Next comes the fresh coriander. Chop it very finely and add it to the potatoes. I personally love adding plenty of fresh coriander because it gives the parathas such a lovely aroma and fresh flavor.Then finely chop the green onions and add them as well. I also add two finely chopped onions.One important tip here is to chop the onions and coriander very finely. If the pieces are too large, they can make the paratha break while you are rolling it. Fine chopping helps everything mix nicely and makes the dough easier to handle.Now mash and mix everything together really well until the potatoes and all the spices are evenly combined.

Making the Dough

Now we will prepare the dough.Take the required amount of flour in a large bowl. Add some salt and a little baking powder. Then add the prepared potato mixture directly into the flour.This is actually my favorite way of making aloo paratha.Many people prepare the dough separately and make the potato filling separately. They then roll out a roti, place the potato filling in the center, seal it and roll it again.That method is also delicious, but I prefer this easier method because I mix the potatoes directly into the flour.It saves time and effort, and the potato mixture gets evenly distributed throughout the dough. Every bite has that delicious potato and spice flavor.Add a little water if needed and knead everything together until you have a soft dough. Try not to make the dough too hard.

Making the Parathas

Once the dough is ready, divide it into small portions and make small balls.Take one ball and roll it out into a round paratha. You can make the parathas as thick or thin as you prefer.Meanwhile, heat your tawa properly. Once it is hot, carefully place the rolled paratha on it.Let it cook from one side, then spread some desi ghee over the top and flip it. Apply some more desi ghee to the other side as well.Cook until both sides become beautifully golden with those lovely brown spots.The aroma at this stage is honestly amazing
