Orange mousse with caramel
Ingredients
- 4 sheets of gelatin;
- 5 oranges;
- 4 eggs;
- 150-200 g of sugar;
- 300 ml of creamy cream;
- 2 tablespoons water.
Preparation
Soak gelatin in water according to the instructions on the package. Squeeze the juice of two oranges and warm in the microwave for 1 minute. Drain excess water from under the gelatin, add it to the warmed juice, mix thoroughly and cool.
Rub 3 peeled oranges. Mix it with egg yolks and 100-150 g of sugar. Put in a water bath and cook, stirring occasionally, for 10 minutes. Remove from heat and continue stirring until the mixture cools.
Add the gelatin with juice to the egg mixture. Whip egg whites and cream in a separate container. Stir the two mixtures to a homogeneous consistency, spread over the serving glasses and refrigerate until completely solidified.
In a saucepan, put 50 g of sugar, pour in water and cook, stirring, over high heat until the sugar turns into beige. Divide the three oranges into slices and place in a saucepan. Stir so that the oranges are covered in caramel. Cool, place the slices on the finished mousse and pour the caramel.
