Today I have the pleasure sharing my way of cooking rice noodles, I hope you will like this recipe!
Rice noodle are simply noodles made from rice and corn starch is added to get that chewy and gelatinous texture of the noodles.
You can find it fresh, dry or frozen in various shapes and textures in many Asian countries...
But being on the Island of Mauritius, i don't have such priviledge...so i use the dried ones.
I put it in water to soak one day before use.
There are many ways cooking rice noodles, it varies from countries to countries...
In many places, tamarind sauce and peanuts are a must in rice noodles...but I don't kinda like it with these ingredients - my personal taste though.
For my recipe I used :
Onions / Carrots / Eggplant / Baby corns / Mushrooms.
And chicken slices which I started by sautéing in my wok with soya sauce, pepper and sesame oil.
Then I added the cut veggies to the wok...
First put in the eggplant and mushrooms...
Next add the carrots and baby corns...
Lastly the onion...sautéed all well together.
Once you see the vegetables are soft enough...we are ready for the next step.
Add in oyster sauce and chicken stock. Check the seasoning, and add some more sesame oil.
Now add your rice noodles - drain it before.
Mix everything together until the liquid is absorbed by the noodles and they are well done.
Added some fresh coriander and basil when it is ready...
Et voilà friends...
Easy and simple to do!
