Today I got my last stored apples from autumn from the cellar. With most of the fresh apples that I harvested last fall, I squeezed out the juice, I deep-frozen it so you always have apple juice ready if you want, because thawed it tastes like freshly squeezed!

Ingredients
- 160 g butter vegan
- 140 g cane sugar, white
- 1 pinch of salt
- vanilla extract
- a few drops of butter flavor (optional)
- 260 g of flour
- 3 tsp baking powder
- Organic lemon zest
- 200 ml vanilla drink from Alpro
- 3 large apples
2 tbsp apricot jam
Preparation
Beat the butter, sugar, salt, vanilla extract and butter flavor until frothy.
Mix the flour with baking powder and lemon zest and alternately stir with the vanilla drink to the frothy butter.
Peel, core and cut apples into small pieces.
Pour half of the dough into a greased springform pan 脴 24 cm and smooth out, distribute half of the apples on top.
Spread the rest of the dough over it and put the other half of the apples on top and spread evenly.
Bake the cake in the preheated oven at 170 掳 C for 40-50 minutes.
Bring apricot jam to a boil and let simmer until the moisture has evaporated, stirring constantly! Spread the hot apricot jam on the still hot cake.
Detach the apple pie from the baking pan and let the cake cool down before serving it to your loved ones with coffee.
