Last weekend I decided to make some egg salad for breakfast, so the prior day we hard-boiled three eggs for the next morning.
Said morning I open up the fridge to grab the mayo and
How can we not have mayo, not in the fridge and not in the cupboard? Darn it! Eggs were already boiled - what to do?
Improvise is what you do! We had Greek Yogurt and we had a nice ripe avocado. So I mashed up the avocado and mixed it with a couple of tablespoons of yogurt, a few drops of olive oil, et voila, a greenish kind of eggless mayo was born.
The eggs were cubed and I added about a tablespoon of finely chopped onion and roughly three Tbs of chopped bread'n butter chips into the mayo. Sometimes I also add a little apple which gives it a nice crunch, not this time though.
Of course, the salad still needed to be spiced. Salt, coarse black pepper, and paprika are my go-to for egg salad, any egg salad, as well as a bit of the Bread'n Butter Chips liquid. It adds a nice sweet, tangy taste to the salad.
But what's an egg salad without bread (or wraps)? After having had normal sourdough bread since Christmas I decided I wanted something slightly different. I have filed this recipe under Brioche bread but it really isn't, at least not the way I know Brioche from Europe.
Into this sourdough bread, I mix buttermilk or buttermilk powder whichever I have on hand into the dough and I add either honey or this time I used maple syrup. Not a lot, mind you because I didn't want to have a really sweet bread, just a little bit to give it a sweet hint.
It was a perfect mix of the soft, slightly sweet-ish sourdough bread, lightly toasted, and topped with the eggocado salad - a match made in heaven - mmhmm!
Hubby and I agreed that eggocado salad will be substituting mayo-egg salad going forward unless we run out of ripe avocados (hardly ever happens but then again, we also hardly ever run out of mayo - and it did happen).
There you have it. May not look that nice but you know that looks can be very deceiving, in the kitchen and elsewhere. This tasted awesome. Be it for a hearty breakfast, a brunch, or lunch - highly recommended 👍.
Unless, of course, you cannot eat eggs or wheat for medical reasons - sorry!
I like to improvise in the kitchen, much to the dismay of my hubby who wants to hunt me down for recipes - LOOL.
